Chocolate Macaroons

1. Heat oven to 350°. Line a baking sheet with parchment paper
- 3/4 cup Sugar
- 2 1/2 cups Unsweetened shredded coconut

- 1 tsp Pure vanilla extract

1. In the bowl of an electric mixer fitted with paddle attachment, cream the butter until fluffy
- 1/2 cup Unsalted butter (1 Stick)
- 1 cup Sugar
- 2 Large eggs, separated
- 1 tsp Pure vanilla extract
- 1 tsp Lemon zest, chopped
- 2 1/2 cups All-purpose flour, sifted
- 3/4 tsp Salt
- Sliced almonds, for decorating
- Cinnamon sugar, for sprinkling
Brown Rice Jambalaya

This is a happy accident of a variation on the classic
- 1 pound pink shrimp (frozen is fine but thaw first)
- 1 pound andouille sausage
- 1 medium onion
- 1 green pepper
- 4 ribs of celery
- 1/2 cup frozen okra (thawed)
- 1 can Rotel (spicy as you like)
- 2 cloves of garlic, diced
- 1 bay leaf
- 1 tb Tony Cachere Seasoning
- 8 ounces of chicken stock
- 2 cups of brown rice (cooked)

- 1/2 cup Sugar
- 1 Large whole egg
- 2 Large egg yolks
- 1 tsp pure vanilla extract Zest of Lemon
- 2 1/2 cups all-purpose flour

Cranberry - Lemon Squares

1. Heat oven to 325°. Butter an 8-inch square baking pan, and set aside
- 6 tsp Unsalted butter, chilled and cut into 12 pieces, plus more for pan
- 1 1/2 cups Dried cranberries (about 7 ounces)
- 1/4 cup Confectioners' Sugar, plus more for dusting
- 1 cup All-purpose flour
- 2 Large egg
- 3/4 cup Granaulated sugar
- 1/4 cup Freshly squeezed lemon juice, plus 1 1/2 teaspoons (about 3 lemons)
Black Bean Soup

From an old clipping my mother gave me
- 2 cups dried black beans (1 lb)
- 2 lb shin of beef with bone
- 8 cups of water
- 2 beef bouillon cubes
- 1/2 cup sliced onion
- 1 cup sliced carrot
- 1 1/2 cup sliced celery, with tops
- 3 whole cloves
- 1 bay leaf
- 1 T salt
- 1/4 t fresh ground pepper
- 1/2 cup sherry
- 2 hard-boiled eggs
- 1 lemon thinly sliced
- Chopped parsley

1. Heat oven to 350°. Spread the chopped walnuts on a baking pan; toast until fragrant, 5 to 10 minutes

Texas-style Sloppy Joes

This is a strange thing. It seems that generic "Texas-style" recipes include beans
- 1 pound ground beef
- 1 package McCormick® Sloppy Joes Seasoning Mix
- 1 can (14 1/2 ounces) pinto beans, rinsed and drained
- 1 can (8 ounces) tomato sauce
- 1/4 cup ketchup
- 1 can (4 ounces) green chiles, chopped
- 8 hamburger rolls or flour tortillas
- Shredded cheese (optional)
Currant And Spice Oatmeal Cookies
