Pumpkin Chocolate Chip Bread

1. Combne eggs, sugar, pumpkin, oil, applesauce 2
- 1 1/2 C flour
- 1 1/2 C WW pastry flour (or use all reg)
- 2 tsp cinnamon
- 1 tsp salt
- 1 tsp soda
- 4 eggs (or Egg Beaters)
- 2 C sugar (or 1/2 C Sugar Twin and 1 1/2 C sugar)
- 2 C canned pumpkin (15 oz)
- 3/4 C oil
- 1/2 C applesauce
- 1 1/2 C chocolate chips
Shrimp and Lemon Stir Fry

- 1/2 tsp sugar

- 1/2 lb uncooked medium shrimp, peeled and deveined
- 1 T canola oil
- 3/4 C sliced celery
- 1/2 medium green pepper, cut in strips
- 1/2 medium red pepper, cut in strips
- 1 C sliced mushrooms
- 3/4 C sugar snap peas
- 1 green onion, sliced
- 1 C hot cooked rice
Sweet Potato and Ham Skillet

- 3 C uncooked whole wheat spiral pasta
- 2 med sweet potatoe, peeled and cut in 1/2 in cubes

- 7 oz cooked ham cubed

- 4 oz cheddar
- 6 oz pkg Snow or Alaska King crab
- 1 T minced onion
- 1-2 garlic cloves
- 2-4 drops tabasco sauce
Salmon with Pecan Crust

- 2 salmon fillets- 6 oz ea.
- 2 T mayo
- 1/2 C finely chopped pecans
- 1/3 C seasoned bread crumbs
- 2 T grated Parmesian
- 1 T minced fresh parsely
- 1 T butter, melted
Garlic Basil Tortellini Soup

- 2 garlic cloves, minced
- 1 tsp olive oil
- 2 cans (14 1/2 oz each) lo salt chicken or vegetable broth
- 1/2 C water
- 1/3 C minced fresh basil
- 1/4 tsp pepper
- 22 1/2 C frozen cheese tortellini
- 1 Can (19oz) white kideny or cannelini beans rinsed and drained
- 2 T balsamic vinegar
- 1/4 C grated or shredded Parmesian cheese
Decorator's Icing

Mix all ingredients and beat 5 min
- Chocolate
- 1 lb powdered sugar (3 1/2 C unsifted)
- 1 stick margarine (butter makes it too soft)
- 1/2 C cocoa
- 1 tsp vanilla
- 1 T instant coffee powder or expresso powder, if desired - to taste
- 1/3 C milk (approx - add slowly until spreading consistency)

- 2 lb powdered sugar
- 1 1/3 C Crisco solid
- 1/2 C Carnation dry milk
- 1 tsp salt dissolved in 1/4 C water (undissoved salt leaves craters in colored icing)
- 1/2 tsp vanilla
- 1/2 tsp almond
- Food coloring or decorator's paste coloring as desired
- addtional water - add slowly until spreading consistency reached
Salmon with Orange Glaze

- 2 tsp reduced sodium soy sauce
- 1/2 tsp grated ginger root

- 3 T white rice vinegar (or other kind)
- 4 4 oz salmon fillets
- 6 scallions
- 1/4 C toasted sesame seeds (opt)

Christmas Mint Bars

Mixing gelatin with canned frosting gives it a marshmallow-like consistency - YUMMY!

- 1 pkg chocolate cake mix
- 1/3 C margarine
- 1 egg
- 1 tsp mint flavoring

- 1 envelope unflavored gelatin - mix with 1/4 C boiling water then cool slightly
- 1 can regular vanilla frosting
- 1/2 tsp mint flavoring
- Red or green food coloring
