Ingredients

  • 2 garlic cloves, minced
  • 1 tsp olive oil
  • 2 cans (14 1/2 oz each) lo salt chicken or vegetable broth
  • 1/2 C water
  • 1/3 C minced fresh basil
  • 1/4 tsp pepper
  • 22 1/2 C frozen cheese tortellini
  • 1 Can (19oz) white kideny or cannelini beans rinsed and drained
  • 2 T balsamic vinegar
  • 1/4 C grated or shredded Parmesian cheese

Step 1

- Saute garlic in oil until tender
- Stir in broth, water, basil, pepper; bring to a boil; stir in tortellini; reduce heat and simmer uncovered for about 3 minutes or until pasta floats; stir in beans and vinegar; heat
- Sprinkle wirh cheese
