White Fantasy Clusters Chex Mix

Not just a snack, not just a candy, but a combination of both that is outstanding
- 4 cups Rice Chex® cereal
- 2 cups pretzel sticks, coarsely broken
- 1 cup cashews, coarsely chopped
- 1/2 package (16-oz size) vanilla-flavored candy coating (almond bark)
- 1/2 cup semisweet chocolate chips
- Peanuts make an easy stand-in for the cashews.
CrockPot Enchiladas

Yields: 6 servings | Serving size: 1 enchilada | Calories: 249 | Previous Points: 5 | Points Plus: 6 | Total Fat: 6
- 2 half chicken breasts on the bone with skin (remove skin before adding to enchiladas)
- 1 (16 oz.) red enchilada sauce (no sugar added)
- 1 (4 oz.) can green chile peppers
- 1/2 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded cheddar cheese, reduced fat
- 1 (8 oz.) container sour cream, fat free
- 6 medium whole wheat tortillas, low sodium if possible (corn tortillas are not recommended as they tend to fall apart)

1. Mix together in a large bowl sugars, cinnamon, and salt
- Ingredients:
- 1 1/2 C. Sugar
- 1 1/2 C. Brown Sugar
- 3 Tbsp. Cinnamon
- 1/8 tsp. Salt
- 1 Egg White
- 2 tsp. vanilla
- 3 Cups Almonds
- 1/4 C. Water
Warm Bacon Dip in Bread Bowl

Yummy Yummy appetizer that gets rave reviews with people scraping the bottom of the bread bowl every time!
- 1 (1 lb) round loaf of sourdough bread, unsliced
- 1 (8-oz) pkg. cream cheese, softened
- 1 1/2 cups sour cream
- 2 cups shredded cheese ( I used cheddar)
- 1 tsp Worcestershire sauce
- 3/4 pound of mesquite or maple bacon, cooked and crumbled
- 1/2 cup of chopped green onions
- assorted crackers, toasted bread cubes, and sliced veggies
Olive Cheese Bread

Roughly chop both black olives and pimiento-stuffed green olives
- 1 loaf French Bread
- 6 ounces, weight Pimiento-stuffed Green Olives
- 6 ounces, weight Black Olives
- 2 stalks Green Onions (scallions)
- 1 stick Butter, Room Temperature
- 1/2 cup Mayonnaise
- 3/4 pounds Monterey Jack Cheese, Grated

- Ingredients 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/4 cup butter or margarine
- 1 1/2 cups Corn Chex® cereal
- 1 1/2 cups Rice Chex® cereal
- 1 1/2 cups Wheat Chex® cereal
- 1/2 cup dried cranberries, dried cherries or raisins
Chicken Caesar Lasagna Rolls

1. Melt butter in a large saucepan over medium heat
- 3 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1/2 cup Caesar Salad dressing
- Salt to taste
- 1 pound boneless, skinless chicken breast
- 1/2 teaspoon salt, divided
- 1/2 teaspoon garlic powder, divided
- Pinch of black pepper
- 1/2 cup Caesar Salad dressing
- 6 ounce lasagna noodles (about 8 whole noodles) cooked al dente
- 15 ounce part skim ricotta
- 1 egg yolk
- 1 cup shredded mozzarella, divided
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried parsley flakes
- Salt and pepper to taste
Chocolate Trifle

- 1 brownie mix
- 1 - 3.9 oz pkg of instant chocolate pudding mix
- 1/2 cup of water
- 1 - 14 oz. can of sweetened condensed milk
- 1 - 8 oz Cool whip
- 1 - 12 oz Cool whip
- 1 - 1.5 oz chocolate candy bar (she used Andes Peppermint Crunch baking chips)
