Pasta with Arugula, White Bean and Walnuts

Cook pasta in a large pot of boiling salted water until al dente
- 12 ounces farfalle (bow-tie pasta)
- Coarse salt and ground pepper
- 4 garlic cloves, thinly sliced
- 4 tablespoons butter
- 1 pound baby arugula
- 1 can (15 ounces) cannellini beans, rinsed and drained
- 1/3 cup walnut pieces, toasted if desired
Zucchini Pancakes

Preheat the oven to 300 degrees F
- 2 medium zucchini (about 3/4 pound)
- 2 tablespoons grated red onion
- 2 extra-large eggs, lightly beaten
- 6 to 8 tablespoons all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Unsalted butter and vegetable oil
Corn and Rice Salad

1. Husk corn and remove silk with a stiff brush; rinse
- 4 ears fresh corn
- 1-1/2 cups cooked rice, cooled
- 1 pint cherry or grape tomatoes, halved
- 1 cup fresh arugula
- 1 small red onion, cut in thin wedges
- 1 jalapeño pepper, thinly sliced
- 2 Tbsp. rice vinegar or red wine vinegar
- 2 Tbsp. olive oil
Meatloaf

Preheat oven to 350 1
- 2 lb ground beef
- 3/4 c oatmeal
- 1 onon, finely chopped
- 1/2 c catsup
- 1/4 milk
- 2 eggs
- 1 tablespoon horseradish
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Glaze
- 1/2 cup ketchup
- 1 tablespoon horseradish
- 3 tbsp brown sugar, firmly packed
- 2 teaspoon mustard
Family Ranch Dressing

Combine all ingredients in a blender; puree until smooth
- 1/4 cup mayonnaise
- 1/4 cup buttermilk
- 1 tablespoon olive oil
- 1 scallion, trimmed and roughly chopped
- 1 garlic clove chopped
- 1 tablespoons dill or basil, chopped
- 1 tablespoon of parsley
- 1/2 teaspoon Dijon mustard
- 1-2 teaspoon lemon juice
- Salt to taste
- Freshly-ground black pepper to taste
Chili

1. Prepare Chili Seasoning Puree
- 1 Recipe Chili Seasoning, (recipe below)
- 1-1/2 lb. ground beef chuck
- 1 large onion, chopped
- 2 stalks celery, sliced
- 2 Tbsp. smoked paprika
- 2 tsp. ground coriander
- 1 tsp. crushed red pepper
- 1/4 to 1/2 tsp. ground cloves
- 1 28-oz. can whole tomatoes, cut up
- 1-1/2 cups water
- 1 14-oz. can beef broth
- 1 6-oz. can tomato paste
- 1 to 2-oz. bittersweet chocolate, chopped (optional)
- 1-1/2 cups dried plums or raisins, chopped
- Cumin Polenta (optional), (recipe below)
Coucous with Almonds and Raisens

Check couscous package instructions to see how much boiling water you will need
- 2 cups instant couscous
- 1/4 cup currants
- 1/4 cup sliced almonds, toasted
- 1/4 chopped flat-leaf parsley
- Salt and freshly ground black pepper
Meatballs

1. Preheat oven to 400° F
- 2 pounds lean ground beef
- 2 pounds ground pork
- 1 medium onion, minced
- 2 slices soft bread, crusts removed and torn into pieces
- 5 cloves garlic, minced
- 2 eggs
- 1/2 cup chopped fresh parsley
- 1/4 cup olive oil
- 1 tablespoon Italian seasoning
- 1 tablespoon kosher salt
- 1 1/2 cups freshly grated Parmesan
- 3 teaspoons freshly ground black pepper
- 1 1/2 cups ricotta
- 1 jar store-bought marinara sauce or Chunky Marinara Sauce
Shrimp Mango Salad

Whisk first 3 ingredients in small bowl; season with salt and pepper
- 1/2 cup Asian sweet chili sauce
- 2 tablespoons unseasoned rice vinegar
- 1 tablespoon minced peeled fresh ginger
- 12 peeled cooked large shrimp with tails left intact (about 8 ounces)
- 1 large head of butter lettuce, leaves separated
- 1 large mango, peeled, pitted, cut into 1/3-inch-thick slices
- 1 avocado, halved, pitted, peeled, cut into 1/3-inch-thick slices
