CURRIED CHICKEN WITH COUSCOUS

Here's a delicious dish that's relatively quick and easy to prepare
- 2 cups water
- 4 cups canned light coconut milk
- 1-1/2 tsp. salt
- 2 cups uncooked couscous
- 2 Tbsp. all-purpose flour
- 2 Tbsp. curry powder
- 2 lbs. boneless, skinless chicken breast halves, cut in 1/2-inch-thick strips
- 4 tsp. vegetable oil
- 2 cups julienned carrots
- 2/3 cup raisins
- 1/2 cup chopped fresh cilantro

Preheat oven to 425°F. Spray donut pan with nonstick cooking spray
- VANILLA GLAZE:
- 2 cups cake flour, sifted
- 3/4 cup granulated sugar

- Ingredients
- 1/4 1/4cup 1/4cup slivered almonds
- 12 12ounces 2 1/2 or grape tomatoes (about 2 1/2 cups)
- 1/2 1/2cup 1/2cup packed fresh basil leaves
- 1 1medium 1 garlic clove , minced or pressed through garlic press (about 1 teaspoon)
- 1 1small 1/2 pepperoncini (hot peppers in vinegar), stemmed, seeded, and minced (about 1/2 teaspoon) (see note)
- Table salt
- pinch pinch red pepper flakes (optional)
- 1/3 1/3cup 1/3cup extra-virgin olive oil
- 1 1pound 1pound pasta , preferably linguine or spaghetti

John Compton served this to us in England in 2000 when we went to England for Rachel's wedding
- 1-1/2 pounds of lean minced beef
- 6 oz. streaky bacon, finely chopped
- 1 large onion, diced
- 4 large carrots, thinly sliced
- 4 or more fresh garlic cloves, chopped
- 1 tin of chopped tomatoes
- 1 jar of bolognaise sauce (if you cannot find, use two tins of tomatoes)
- 1 large spoonful of tomato puree (concentrated tomato paste)
- 6 oz. sliced mushrooms
- 1 large glass of robust red wine
- Pinch of salt and black papper to taste
- Bunch of fresh basil
- Parmesan cheese
HEAVENLY BANANAS FOSTER BREAD PUDDING

Heat oven to 350 degrees F
- 1/2 of an angel food cake, cut into 1 inch cubes (about 6 cups)
- 2-1/4 cups milk
- 3 large eggs
- 1/2 cup light brown sugar
- 1/4 cup spiced rum
- 2 tsp. vanilla
- 3 firm to ripe bananas, sliced 1/2 inch thick
- Powdered sugar for dusting
- Lowfat vanilla ice cream (optional)

- 1/2 cup fat free sour cream

- 3 pounds chicken wingettes (about 30)
- 1/2 teaspoon salt, divided
- Dash pepper
- 1-1/2 cups ketchup
- 1/4 cup packed brown sugar
- 1/4 cup red wine vinegar
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon minced garlic
- 1 teaspoon Liquid Smoke, optional
- Sesame seeds, optional
UNJURY Fudgesicle Pudding Pops

- Nutrition Facts per 3 oz popsicle (makes 6):
- Use Instant Sugar-Free Chocolate Jell-O Pudding1 , 1 oz box, makes 6 popsicles
- Use Jell-O Sugar Free Instant Pudding (Not Cooked), 4-serving package
- Measure 2 cups of cold skim milk following package directions.
- Add two scoops of Unflavored UNJURY to the two cups of cold milk.
- Thoroughly mix the UNJURY powder with the milk by shaking or stirring.
- Put the Jell-O Sugar Free Instant (Not Cooked) Dry Pudding Mix into a bowl.
- Add the UNJURY and milk mixture to the dry pudding mix.
- Stir for 2 minutes.
- Pour into 6 small paper cups (3 oz pudding per cup).
- Place popsicle stick in center of each cup.2
- Put cups in freezer for 4 hours.
- Once popsicles have frozen, peel away the paper cup and enjoy!
