CHERRY CHIFFON CAKE

Very very old recipe from Renee Olson's mom
- Sift together:
- 1-1/8 cups (1 cup plus 2 Tbsp) sifted flour
- 3/4 cup sugar
- Form a well and add:
- 1/4 cup oil
- 1/4 cup cold water
- 2 unbeaten egg yolks
- 1/2 tsp. vanilla
- 2 Tbsp. marachino cherry juice
- Beat with spoon until smooth.
- In a second bowl:
- 1/2 cup (4) egg whites
- 1/4 tsp. cream of tartar.
- Beat into stiff peaks, stiffer than for merine. DO NOT UNDERBEAT!
- CHERRY ICING:
- Cream 3 Tbsp. vegetable shortening or butter
- 1/2 cup sifted powdered sugar.
- Beat in 1-1/4 cups more of powdered sugar alternating with 1/4 cup marachino cherry juice.
- When smooth, stir in 1/2 tsp. grated lemon rind.

FLANK STEAK WITH SALSA VERDE

- 2 cups loosely packed fresh parsley
- 3 scallions, coarsely chopped
- 2 tablespoons capers, drained
- Zest and juice of 1/2 lemon
- 2 anchovy fillets
- 2 cloves garlic, smashed
- 1/2 teaspoon dijon mustard
- 1/3 cup extra-virgin olive oil, plus more for the grill
- Kosher salt
- 1 flank steak (about 1 1/2 pounds)
- Freshly ground pepper
- 2 or 3 medium tomatoe
PEA/CAULIFLOWER SALAD

Put cauliflower, celery, carrots, onion, peas and broccoli in a large bowl
- 1 head cauliflower broken in bite size pieces
- 3/4 cup cut up celery
- 4 carrots, shredded
- 1 small onion chopped
- 1 small package frozen peas, thawed
- 1 head broccoli, broken in bite size pieces
- One 8-ounce bottle creamy cucumber salad dressing

- 1/2 cup butter
- 3 cups powdered sugar
- 1 tsp. vanilla
- 2 Tbsp. milk
White Wine-Marinated Steak

The three-ingredient marinade for these steaks also serves as the secret to the sauce
- 3 tablespoons white wine
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 1 pound chuck eye steaks, trimmed
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
- 1 large shallot, sliced
- 1/4 cup fat-free, lower-sodium beef broth

- 1 bag (16 ounces) frozen Asian vegetable blend
- 1/3 cup dry-roasted peanuts, chopped

- Grilled chicken breast (12 oz.) sliced
- 4 oz. sun dried tomatoes
- 8 oz. gorgonzola cheese
- 8 oz. cream
- 1 oz. garlic
- pinch fresh basil
- Salt and papper to taste
