- soy curls:
- 1 teaspoon Old Bay seasoning
- 1 tablespoon poultry seasoning
- 1 teaspoon salt, plus more to taste
- 8 ounces (1 package) dehydrated soy curls
- 2 tablespoons extra-virgin olive oil (divided)
- 1 tablespoon minced fresh sage leaves
- Freshly ground black pepper
- Freshly chopped flat-leaf Italian parsley
- mushroom gravy:
- 1 tablespoon extra-virgin olive oil
- 1/2 cup chopped yellow onion
- 1-1/2 cups wild mushrooms, sliced
- Pinch of salt
- 1 13.9-ounce carton of vegan mushroom gravy (we used Pacific Foods)
Creamy Vegan Mint Brownie Ice Cream

Instructions Set your churning bowl in the freezer the night before to chill
- 1/2 cup fresh mint, divided
- 1.5 cups raw cashews (soaked for 8 hours, then drained)
- 1 14-ounce can full fat coconut milk (or other non-dairy milk, though full fat coconut will yield creamiest result)
- 1/2 - 3/4 tsp peppermint extract (depending on how minty you like it)
- 1/4 cup cane sugar
- 1/4 cup agave nectar or maple syrup (or honey if not vegan)
- 3 T coconut oil, melted
- 1 tsp vanilla extract
- 1 cup packed dates, pitted (if you dates are dried out, soak them in warm water for 10 minutes to plump them back up, then drain)
- 1 1/4 cups raw walnuts (I used a mix of almonds and walnuts)
- 1/3 cup cacao OR cocoa powder (though cocoa powder makes it not technically raw)

- 1 1/2 pounds mushrooms (see headnote)
- 1 teaspoon kosher salt
- 1/2 to 1 cup neutral olive oil or grapeseed oil, or more as needed

- 2 clove garlic, finely chopped

- 3 tbsp sugar
- 3 tbsp warm water
- 1 cup cold plain soy milk
- 1 tsp salt
- 2 tbsp melted margarine
- 13 to 14 oz all purpose flour
- Margarine Block
- 1 cup Earth Balance margarine (not the whipped kind)
- 2 tbsp flour
Vegan Bechamel Cheese Sauce

Sauce Over medium-low heat, heat the oil in a small saucepan
- 1 Tbs. extra-virgin olive oil
- 1 Tbs. chickpea flour
- 1 cup non-dairy milk
- 1/2 cup mozzarella cheese shreds
- 2 Tbs. vegan grated parmesan or nutritional yeast
- A pinch of nutmeg
- Salt and black pepper to taste

In a small bowl combine the yeast, warm water and brown sugar
- 1 teaspoon active dry yeast
- 3/4 cup warm water
- 2 teaspoons brown sugar
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3 tablespoons vegan sour cream
- 2 tablespoons olive oil
Plum Cake (Vegan)

In a small bowl combine flour, baking powder, salt and cinnamon and set aside
- Crumble topping:
- 1/2 lb ripe plums (cut in quarters and pitted) I doubled the plums and ended up with crumble instead of cake.
- 3/4 cups ripe banana (about one big banana)
- .875 c sugar ~you could probably do very well with less
- 1.2 c flour (maybe more? I converted these quantities from gms and they don't seem quite right)
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- .625 c grapeseed oil or Earth Balance (this is a LOT of oil...considering the banana, I'm pretty sure we could go lighter here)
- 1/4 cup flour [Any kind will do: whole wheat, gluten-free, spelt, white]
- 1/2 cup rolled oats
- 3-4 T sugar, brown or white
- 2 T Earth Balance, melted and drizzled over top
- 1/4 cup chopped nuts,
