- 1 tablespoon fresh rosemary
- 5 tablespoons fresh Italian flat leaf parsley, divided
- 1 teaspoon kosher salt or sea salt, divided
- 1/4 cup champagne vinegar
- 2 tablespoons whole grain mustard
- 1 tablespoon Dijon mustard
Blueberry Zucchini cake with lemon buttercream

Preheat oven to 350 degrees F
- 3 flax eggs
- 1 cup vegetable oil
- 3 teaspoons vanilla extract
- 2 1/4 cups raw sugar
- 2 cups finely shredded and drained zucchini
- 3 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 pint fresh blueberries (you can reserve a few for garnish if so desired)

- 1 cup cocnut cream
- organic confectioners' sugar to taste
- 1 Meyer lemon, juice and zest of (about 2 tablespoons)
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Best Gluten Free Pizza Crust- (Vegan)

The big secret here is preheating your oven with the pan you'll use for baking the crust
- 2 1/2 cup gluten free all purpose hybrid flour
- 1 3/4 cup water or milk of choice
- 1 packet or 2 1/2 tsp of dry active rapid rise yeast
- 1 tsp sugar
- 2 T oil
- 1 tsp salt
- 3 tsp guar or xanthan gum
- 3 tsp powdered pectin

Drain tofu, (press if needed) Pour olive oil and all spices, garlic, lemon, tamari into roasting pan Cut tofu into

- Smoked paprika
- Organic chipotle powder
- Black Hawaiian or smoked alder salt
- Organic thyme and sage
- Organic lemon
- Garlic
- (Sesame oil if desired)
- Freshly ground pepper (we mix with dried organic papaya seeds)
Warm ‘Vegveeta’ Cheese Dip

Combine all ingredients in a blender and puree until very, very smooth (start with 1 cup + 1 tbsp milk)
- 1/2 cup raw cashews
- 1 tbsp tahini (or 1/8 cup pine nuts)
- 1 1/2 tbsp freshly squeezed lemon juice
- 2 tsp apple cider vinegar
- 1 cup + 1-3 tbsp plain unsweetened almond milk (see note)
- 1/4 cup water
- 1/2 tsp sea salt
- 1/4 tsp prepared yellow mustard
- 1 tbsp arrowroot powder
- 1/2 tsp (little scant) paprika
- 1/8 – 1/4 tsp turmeric (for color)

This vegan chicken pot pie is comfort food to the max and despite the scary phyllo crust is easy to put together
- 1/2 large yellow onion chopped
- 8-10 baby carrots chopped (about 1/2 cup)
- 2 cloves of garlic, minced
- 1/2 cup of peas (I used frozen)
- 1/2 package (6 oz) Butler's soy curls marinated in curry and broth and cut into cubes**
- 1 heaping tbs of earth balance butter
- 3 tbs chickpea (garbanzo) or other flour
- 1 1/4 cup soy milk
- 1 cube not chicken Bouillon Base)
- 1/4 tsp dried thyme
- 1/4 tsp dried tarragon
- salt and pepper
- 6 sheets of phyllo dough with enough melted earth balance butter to brush on each
- 8 inch round baker’s pan, lightly greased

- 1 pound firm fresh tofu, water pressed out
- 1/2 cup soy milk

- 1/2 teaspoon tarragon
- 1/2 tablespoon fresh rosemary

- 1 whole wheat chapatti or Ezekiel whole grain raw tortilla
