Pizza Waffles

Preheat waffle iron and spray with cooking spray
- 1 package crescent rolls (8 pieces)
- 1 1/3 cup mozzarella cheese
- pepperoni (or your favorite pizza toppings)
- pizza sauce for dipping
Strawberry Lemon Cream Cheese Pound Cake

Preheat oven to 350 degrees F
- GLAZE:
- 13 oz (about 2-1/2 cups) strawberries that are washed, drained (on paper towels) and chopped
- 8 oz (1 cup) butter, softened
- 10-1/2 oz (2-1/3 cups) all-purpose flour
- 1-1/2 teaspoons baking powder
- 1-3/4 cups sugar
- zest of one lemon
- 6 oz cream cheese, softened
- 4 large eggs, plus one large egg yolk, room temperature
- 1 teaspoon strawberry extract
- 4 oz (1 cup) confectioners' sugar
- 2 Tablespoons fresh lemon juice, more as needed
Great Pork Chop Bake

Brown pork chops in oil. Transfer to baking dish
- 6 pork chops
- 1 T. veg. oil
- 1 can cream of chicken soup
- 3 T. ketchup
- 2 T. worcestershire sauce
- 1/2 t. salt
- 1/4 t. pepper
- 4 med. potatoes, cut into wedges
- 1 med. onion, sliced into rings
Italian Potato Salad

Boil the potatoes until fork tender
- 2- 2 1/2 lbs potatoes
- 1/4 c. olive oil
- 2 T. whole-grain mustard
- 1 T. apple cider vinegar
- 1 t. honey
- 1/2 t. kosher salt
- 1/2 t. pepper
- 8-12 oz salami, thinly sliced, quartered bite-size, about 2 c.
- 2 green onions, sliced very thin, about 1/4 c.
Summer Vegetable Pancakes with Basil Chive Cream

Make Basil Chive Cream: In a bowl combine chopped basil, chives and salt
- For Basil Chive Cream
- 3/4 c. sour cream
- 1/4 c. chopped fresh basil
- 2 tbsp chopped fresh chives
- salt to taste
- For Pancakes
- 2 zucchini, grated
- 2 carrots, grated
- 1 1/4 tsp salt
- 1/4 c. all-purpose flour
- 1 1/2 tsp sugar
- 1/4 tsp black pepper
- 2 egg whites
- olive oil
Short Rib Lasagna Rolls

For the ribs: In a large Dutch oven or heavy-bottomed stockpot, heat the oil over medium-high heat
- 2 tablespoons olive oil
- 2 1/2 pounds beef short ribs
- 2 teaspoons kosher salt, plus extra for seasoning
- 1 teaspoon freshly ground black pepper, plus extra for seasoning
- 1 onion, roughly chopped
- 4 cloves garlic, peeled and smashed
- 2 (4-inch) sprigs fresh rosemary
- 2 cups red wine, such as pinot noir
- 2 cups beef broth
- 3/4 cup milk
- 1/2 cup heavy cream
- 1 1/2 cups grated Pecorino Romano (6 ounces)
- 1 cup shredded mozzarella (4 ounces)
- 1 (10-ounce) packet frozen spinach, thawed, drained, and squeezed of excess liquid
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1 teaspoon kosher salt, plus extra for seasoning
- 1/2 teaspoon freshly ground black pepper, plus extra for seasoning
- 12 lasagna noodles (about 10 ounces)
- Butter, for greasing baking dish
- 1 (25-ounce) jar marinara sauce
- 1/2 cup freshly grated Parmesan
- Olive oil, for drizzling

Beat egg. Add dry ingredients
- 3/4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1 egg

Pepperoni Roll Up

Defrost bread dough per package directions (I did mine in the microwave under the "defrost fish" setting)
- 1 loaf of frozen bread dough
- 16 slices of thin pepperoni (I bought mine at the deli counter and had them slice it thinly)
- 1 1/2 cups shredded italian cheese mix (more or less to taste)
- 1 tsp. italian seasoning
- pinch of garlic powder
- 1/2 tablespoon parmesan cheese
- 1 tablespoon melted butter
Baked Parmesan Zucchini Rounds

Place oven rack in center position of oven
- 2 medium-sized zucchini
- 1/2 cup freshly grated Parmesan cheese
- Garlic salt & freshly ground black pepper, optional

- 24 ounces, weight White Button Mushrooms
- 1/3 pound Hot Pork Sausage
- 1/2 whole Medium Onion, Finely Diced
- 4 cloves Garlic, Finely Minced
- 1/3 cup Dry White Wine
- 8 ounces, weight Cream Cheese
- 1 whole Egg Yolk
- 3/4 cups Parmesan Cheese, Grated
- Salt And Pepper, to taste
