- 1/2 pound Hot Breakfast Sausage (such As Jimmy Dean Or J.C. Potter) Or Chorizo
- 1 whole Medium Onion, Finely Diced
- 2 whole SMALL Bell Peppers (any Color Combination), Seeded And Finely Diced
- 1 pound Monterey Jack, Grated (OR Mozzarella, Or Other Stringy Melting Cheese), Grated
- Sprinkle Of Chili Powder
- 3 whole Roma Tomatoes, Diced
- 1/4 cup Cilantro, Chopped

BLUEBERRY PASTRIES

1. Add blueberries, cornstarch, sugar and water in a pot
- – 2 Sheets of Ready Rolled Frozen Puff Pastry (thawed)
- – 200g of Blueberries (Fresh or Frozen)
- – 3 Teaspoons of Corn Flour (aka Corn Starch)
- – 3/4 Cup of Caster Sugar (Super Fine White Sugar)
- – 1/2 Cup of Water
- – 200g of Ricotta Cheese
- – 2 Tablespoons of Icing Sugar (aka Powdered Sugar)
- – Milk (for brushing)
- – Extra Powdered Sugar (for dusting)
Pork Chops with Wine and Garlic

Heat oil and butter in a heavy skillet over high heat
- 6 whole Pork Chops (medium-to-thin)
- 2 Tablespoons Olive Oil
- 2 Tablespoons Butter
- Salt And Pepper
- 1-1/2 cup Red Wine
- 1/2 cups Beef Broth (more If Needed)
- 1 whole Bay Leaf
- 18 whole Peeled Garlic Cloves
- 1 Tablespoon Butter (additional)

1.Preheat oven to 225 degrees
- 1 large zucchini
- 2 tbsp. olive oil

Pork Chops with Corn, Bacon and Marsala -Borrowed Salt

Remove pork chops from fridge and season with salt and pepper about 30 minutes before cooking
- 4 fat boneless pork chops
- Salt and freshly ground pepper
- 24 oz / 700 mL chicken stock or broth
- 2 ears of corn, kernels sliced off, cobs reserved and cut into 3" lengths
- 2 small Yukon Gold potatoes, peeled and diced into small 1/2" chunks
- 6 pieces bacon or pancetta
- 3 large shallots, chopped
- 2 garlic cloves, minced
- 1 red chili pepper, seeds and veins removed, chopped
- 4 oz / 118 mL marsala wine
- 2 tsp chopped fresh sage (optional)
- 2 oz / 60 mL half and half
- Handful parsley, chopped
Baked Chicken and Spinach Flautas

Preparation Preheat the oven to 450*F
- 1 pound boneless, skinless Chicken Thighs (about 4)
- 16 ounces Beer (or chicken broth)
- 2 cups Water
- 1 teaspoon Paprika
- 1 teaspoon Kosher Salt
- 1 teaspoon Garlic Powder
- 1 teaspoon ground Cumin
- 1 teaspoon Chili Powder
- 1 Jalapeno Pepper, minced
- 3 cups Baby Spinach, chopped
- 5 burrito-size Flour Tortillas (9 inches)
- 6 ounces Queso Quesadilla or other melting cheese, shredded
- 1 teaspoon Olive Oil, or cooking spray
- Salsa, for serving
Crockpot Country Chicken

Place carrots, celery, and onion in bottom of crockpot
- 4 carrots, cut into 1 inch chunks
- 4 stalks celery, sliced
- 1 medium onion, chopped
- 6 - 8 boneless, skinless chicken breasts, quartered
- 1 tsp dried tarragon leaves
- 1 tsp dried thyme leaves
- salt & pepper
- 1 can (~10 oz) condensed cream of chicken soup (not diluted)
- 1 envelope (~1 oz) dry onion soup mix
- 1/3 cup cooking sherry (or white wine)
- 2 Tbsp cornstarch
- Rice or pasta or egg noodles to serve over
Slow Cooker Cheesy Scalloped Potatoes!

Melt butter in a saucepan on the stove
- 6 large potatoes, peeled and thinly sliced
- 1 onions thinly sliced
- 5 tablespoons butter
- 2 cloves garlic
- 5 tablespoons flour
- 2 cups milk
- 2 cups chicken broth
- 1/2 teaspoon each pepper, thyme and poultry seasoning
- 1/4 teaspoon seasoning salt
- 1 teaspoon dry mustard powder
- 2-3 cups cheese (use your favorite, I love sharp cheddar and Gruyere)
Creamy Potato and Ham Soup

1.Combine potatoes, celery, onion, ham , carrots and water in a stockpot
- 4 potatoes peeled and diced
- 1/3 cup diced onion
- 1/3 cup diced carrots
- 1/3 cup diced celery
- 3 1/2 cup water
- 1 cup diced ham
- 3 chicken bouillon cubes
- 3/4 tsp kosher salt
- 1/2 tsp pepper
- 1 small clove garlic minced
- 5 Tb butter
- 1/3 cup flour
- 1 cup milk
- 1 cup half and half
- Shredded cheese & green onions for topping
Bell Pepper Pizzas

Pre-heat your oven or toaster oven to 350 degrees Fahrenheit
- 1 large green bell pepper
- 1/4 cup pizza or spaghetti sauce
- 1/4 cup grated cheese
- a pinch of red pepper flakes
- a pinch of basil or parsley
- as many toppings as you can fit!
