Crock-pot Salsa Verde Chicken Enchiladas

Place chicken breasts in the crock pot and pour 1 cup salsa over the top
- 4 lg. chicken breasts
- 32 oz. salsa verde
- 1 onion, diced
- 16 oz. Monterey jack cheese
- 1/2 C. low fat sour cream
- juice of 1 lime (&zest)
- 1/4 C. cilantro
- tortillas
- pico de gallo
Whipped Frosting

In a bowl mix together shortening, powdered sugar and salt for 2 minutes
- 1 C. shortening
- 4 C. powdered sugar
- 1/4 tsp. salt
- 1 1/2 tsp. vanilla
- 3 oz. whipping cream
Springtime Salad Spinach & Pasta with a creamy citrus dressing

- salad:
- 1 lb bowtie pasta, cooked al dente , cooled and tossed with olive oil or a bit of the dressing
- 8 cups kale ( about one bunch of Kale), chopped
- 1/2 lemon juiced
- 1/4 cup olive oil
- sea salt
- 1 large head red leaf lettuce or 16-20 cups of spinach
- 1 pint blueberries
- 1 pint raspberries
- 1 pint strawberries
- celery, finely chop 2-3 stalks
- 1 bunch green onion, chopped
- 1/4 cup red onion, chopped fine
- avocado 1-2, chunked
- dressing:
- 1/3 cup orange juice
- 1 heaping tablespoon frozen orange juice concentrate
- 1 tablespoons chopped shallot
- 1/4 teaspoon fresh grated ginger
- 1/2 cup canola oil
- 1/4 cup white balsamic vinegar or cider vinegar
- 2-3 tablespoons honey
- Salt and pepper
Asian BBQ Chicken

Combine everything but chicken in a small bowl
- 1/4 C. packed brown sugar
- 1/4 C. soy sauce
- 2 Tbsp. lime juice
- 1/4 tsp. cayenne pepper
- 1/4 tsp. curry powder
- 3-4 garlic cloves, minced
- 1 tsp. ginger, grated
- 8 boneless skinless chicken thighs
Spicy Lettuce Wraps

Combine chicken, green onions, garlic and ginger
- 20 oz. ground chicken/turkey
- 1/4 c. green onions, chopped
- 6 cloves garlic, minced
- 1 Tbsp. minced ginger
- 1 1/2 C. cucumber, seeded and diced
- 1 red bell pepper, diced
- 1/2 C. carrot, shredded
- 1/4 C. cilantro, chopped
- 1/4 C. cashews, chopped
- 1/2 jalapeno or Sriracha sauce to taste
- 2 limes, juiced
- 1 Tbsp. soy sauce
- 1 Tbsp. brown sugar
- 16 lettuce leaves

- 1 box Devils Food Cake mix
- 1 small instant chocolate pudding pkg.
- 1 C. sour cream
- 4 large eggs
- 1/2 C. oil
- 1/2 c. water
- 1 1/2 C. mini chocolate chips
- 2- 8 oz. cream cheese, softened
- 1/2 C. butter, softened
- 3-4 c. powdered sugar
- 2 tsp. vanilla
