Baked Spaghetti

Preheat oven to 350 ̊F. Brown beef, add sauce, soup, seasoning and sugar
- 1 1 1 lb. ground beef
- 1 1 1 jar spaghetti sauce
- 1 1can 1can of tomato soup
- 2 2 2 tsp. Italian seasoning
- 1 1 1 tsp. sugar
- 16 16 16 oz. Angel Hair pasta
- 1 1/2-2 1 1/2-2 1/2-2 cups cheese
Snickerdoodles

Preheat oven to 375 ̊F. Cream butter and sugar until creamy
- 1 1 1 C. butter, softened
- 1 1/2 1 1/2 1/2 C. sugar
- 2 2 2 eggs
- 1 1 1 tsp. vanilla
- 2 3/4 2 3/4 3/4 C. flour
- 1/2 1/2 1/2 tsp. salt
- 1 1 1 tsp. baking soda
- 2 2 2 tsp. cream of tartar
- 1/4 1/4 1/4 C. sugar
- 1 1 1 tsp. cinnamon
Chicken Enchilada Soup (Chili's)

Add oil to large pot over medium heat
- 1 1 1 Tbsp. vegetable oil
- 3 3 3 chicken breasts
- 1/2 1/2 1/2 C. onion, diced
- 1 1 1 garlic clove, minced
- 4 4 4 C. chicken broth
- 1 1 1 C. masa harina
- 3 3 3 C. water
- 1 1 1 C. enchilada sauce
- 16 16 16 oz. Velveeta
- 1 1 1 tsp. salt
- 1 1 1 tsp. chili powder
- 1/2 1/2 1/2 tsp. cumin
Fruit Dip

Place cream cheese and marshmallow cream in microwave for 20 seconds or until softened
- Marshmallow cream substitution:
- 8 oz. cream cheese, softened
- 16 oz. marshmallow cream
- 1 Tbsp. maraschino juice
- 3/4 C. brown sugar
- 1/4 C. sugar
- 1/2 tsp. vanilla
Grilled Cheese with Bacon, Avocado and Spinach

Heat small skillet over medium heat
- 2 slices sourdough bread
- 2 slices cheese
- 2 strips cooked crisped bacon
- 4 thin slices Avocado
- small handful of fresh baby spinach leaves
Taco Soup

Simmer all ingredients together for 1 hour
- 1 1/2 1 1/2 1/2 lbs. ground beef, browned
- 14 14 14 oz. diced tomatoes
- 28 28 28 oz. stewed tomatoes
- 14 14 14 oz. black beans
- 14 14 14 oz. pinto beans
- 14 14 14 oz. kidney beans
- 14 14 14 oz. whole kernel corn
- 1 1 1 pkg. taco seasoning
- 1 1 1 pkg. dry ranch dressing mix
- 1 1/2 1 1/2 1/2 cups water
Mexican Lasagna

Preheat oven to 375 ̊F. Poach chicken and reserve liquids
- 4 chicken breasts
- 2 qt. chicken broth
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 1/2 C. milk
- 1 C. tomatillo salsa
- 2 C. shredded cheese
- 1 C. corn
- 1/4 C. fresh chopped cilantro leaves
- juice of 1 lime
- Salt and pepper
- 5- 8 in flour tortillas
Guru's Cilanto Lime Chicken Quesadilla

Cilantro-Lime Pesto Put all ingredients in a blender and blend away
- Shredded sharp cheddar cheese
- Shredded Mexican combo cheese
- Cilantro-Lime Pesto (Recipe Below)
- Feta Cheese, crumbled
- Green Onions, chopped
- Corn, cooked
- Tortillas (I like to use large spinach, but plain ole flour works just fine)
- Adobo seasoning (preferably con pepper and not con cumin. You can find this in the grocery store next to the other Mexican food items. It is great to use for in many other Mexican style dishes. I love it.)
- Shredded Chicken breasts (I marinate mine in Worcestershire sauce and Adobo seasoning and grill it.)
- Olive oil
- Cilantro-Lime Pesto
- 1 bunch cilantro leaves (about 1 cup. No stems)
- 3 tablespoons extra virgin olive oil
- 2 tablespoons pine nuts (slices, toasted almonds work as well)
- 1/2 tablespoon chopped, fresh garlic
- 1 1/2 teaspoons lime juice
- 1/2 teaspoon lime zest
- 1/2 cup shredded parmesan or asiago cheese
- 1 1/2 teaspoon salt
- 1/4 cup chicken broth (1/4 cup water + 1 tsp Better Than Bouillon)
Cinnamon Rolls

5 dozen cinnamon rolls
- Frosting:
- 12-14 12-14 12-14 C. BREAD flour
- 2 2 2 Tbsp. salt
- 2/3 2/3 2/3 C. dry powdered milk
- 4 4 4 Tbsp. SAF instant yeast
- 5 5 5 C. water (warm-hot)
- 1 1 1 C. canola oil
- 4 4 4 eggs
- 1 1 1 C. sugar
- Cinnamon
- 1/2 1/2 1/2 C. butter, softened
- brown sugar
- 1/2 1/2 1/2 C. butter, softened
- 8 8 8 oz. cream cheese, softened
- 8 8 8 C. powdered sugar
- 1 1 1 tsp. vanilla
- Pinch Pinch of salt
- Milk (1 Tbsp. at a time)
Chicken Taquitos

Heat oven to 425 degrees. Line a baking sheet with foil and lightly coat with olive oil
- 8 ounces cream cheese, softened
- 1/2 cup green salsa
- 2 tablespoons fresh lime juice
- 1 teaspoon cumin
- 2 teaspoons chili powder
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 6 tablespoons chopped cilantro
- 2 green onions, sliced finely (white and green parts to equal about 4 tablespoons)
- 4 cups shredded cooked chicken (1 rotisserie chicken)
- 3 cups grated monterey jack cheese
- small yellow or white corn tortillas
- kosher salt
- olive oil
