Chunky Chili

In large saucepan, heat oil
- 4 Tbsp vegetable oil
- 2 large onions, chopped
- 4 garlic cloves, minced
- 4 lbs coarse ground beef, or cubed
- 3 lbs bulk sausage
- 3 1/2 lb canned tomatoes
- 12 oz tomato paste
- 6 Tbsp chili powder
- 3 tsp cumin
- 1 Tbsp oregano
- 2 tsp salt
- 2 tsp sugar
- 2 Tbsp unsweetened cocoa powder
- 2 lb can baked beans
- 2 15-oz cans kidney beans, drained
- 1 10-oz can pinto beans, drained
Kielbasa Simmered in Beer and Onions

In a large heavy skillet, melt butter and saute the onions over medium heat until translucent
- 4 Tbsp butter
- 4-5 small onions, thinly sliced
- 1 2-lb package kielbasa
- 2 12-oz bottles of beer
Chicken Plaza Pie

First prepare the onions: Cut a shallow cross in the root of each onion
- 1/2 cup pearl onions
- 6 Tbsp butter
- 12 mushrooms, quartered
- 6 Tbsp flour
- 1 1/2 cups chicken broth
- 1 cup cream
- 2 Tbsp Cognac or sherry
- 1 1/2 cups cooked chicken, cut in bite-sized pieces
- 3/4 to 1 cup cooked broccoli or canned artichoke hearts, cut in small pieces
- 1 sheet frozen puff pastry, or your own pastry dough
Bread & Butter Pickle

Combine cucumbers, onions, peppers, and garlic cloves
- 4 quarts medium cucumbers, sliced
- 6 medium white onions, sliced
- 2 green peppers, chopped
- 3 cloves garlic
- 1/3 cup coarse salt
- 4 cups sugar
- 2 cups cider vinegar
- 1 1/2 tsp turmeric
- 1 1/2 tsp celery seed
- 2 Tbsp mustard seed
Brunswick Stew

Brown chicken in butter in a deep kettle
- 1 broiling chicken, cut into serving pieces
- 3 tsp salt
- Paprika to taste
- 1/4 cup butter
- 2 medium onions, sliced
- 1 medium green pepper, diced
- 3 cups water
- 2 cups canned tomatoes, undrained
- 2 Tbsp chopped parsley
- 1/2 tsp Tabasco sauce
- 1 Tbsp Worcestershire sauce
- 2 cups whole kernel corn
- 1 package frozen lima beans, defrosted
- 3 Tbsp flour
Shepherd's Pie

In a 12-inch skillet, cook and stir the onions in hot oil and 1 tablespoon of butter for 5 minutes
- 4 cups chopped onions
- 2 Tbsp olive oil
- 3 Tbsp butter
- 2 cups sliced carrots
- 2 lbs ground lamb, turkey, beef and/or pork
- 1 Tbsp snipped fresh thyme or oregano, or 1 tsp dried thyme or oregano
- 1 cup chicken broth
- 1 8-oz can tomatoes, chopped
- 1/4 cup brandy
- 2 tsp Worcestershire sauce
- 4 tsp lemon juice
- 1 tsp salt
- 1/2 tsp Tabasco
- 1/4 tsp pepper
- 1 10-oz package frozen whole kernel corn, thawed and drained
- 1 10-oz package frozen peas, thawed and drained
- 2 Tbsp snipped fresh parsley

Baked Cod Creole

Coat baking dish with 1 Tbsp olive oil
- 3 Tbsp olive oil
- 1 1/2 lbs cod sticks or fillets about 1 inch thick
- Salt and pepper
- 1 medium fresh tomato, chopped
- 1 small green pepper, chopped
- 1/2 cup chopped scallions
- 1 clove garlic, minced
- 1 tsp lemon juice
Cold Cucumber Soup

Place all except seasonings in blender, blend until smooth
- 1 medium onion, chopped
- 1 medium cucumber, peeled and cubed
- 3/4 cup chicken broth
- 1 can cream of chicken soup
- 1 cup sour cream
- 6 dashes Tabasco sauce
- 6 dashes Worcestershire sauce
- 1/8-1/4 tsp celery salt
- 1/8-1/4 tsp curry powder
Lobster Newberg

Melt butter in top of a double boiler, stir in flour
- 6 Tbsp butter
- 2 Tbsp flour
- 3 cups lobster, chopped
- 1/8 tsp nutmeg
- Dash paprika
- 1 tsp salt
- 3 Tbsp sherry (optional)
- 3 egg yolks
- 2 cups cream
Tuna Muffins

Mix together rice, cheese, tuna, onion, parsley, 1 tsp seasoned salt, and black olives
- 2 cups cooked rice
- 1 cup grated cheese
- 1 can tuna, drained
- 1 Tbsp dried minced onion
- 1 Tbsp dried parsley
- 1 1/2 tsp seasoned salt
- 2/3 cup black olives, sliced
- 2 eggs
- 2 Tbsp milk
- 1/4 stick margarine
- 1 Tbsp lemon juice
