Hot Chicken Salad

Mix all (except potato chips) together and put in greased casserole
- 2 cups cooked chicken, cubed
- 1 10-oz can cream of chicken soup
- 1 cup chopped celery
- 2 tsp minced onion
- 1/2 cup chopped almonds
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup mayonnaise
- 1/2 can sliced water chestnuts
- 2 cups crushed potato chips
Lemon Bisque

Dissolve jello in boiling water
- Filling:
- 1 3-oz package lemon jello
- 1 cup boiling water
- 2-3 Tbsp lemon juice
- 1/2 cup sugar
- 1 large can very cold evaporated milk
- Crust:
- 1/2 box graham crackers
- 1 1/2 sticks melted margarine
Steamed Chocolate Pudding

1. Use softened butter to grease a 4-cup bowl (Corningware works well)
- 8 tablespoons cold butter, cut into pieces, plus 2 tablespoons, softened
- 8 ounces semisweet chocolate
- 1/2 cup light brown sugar, packed
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1/3 cup cake flour
- 1/2 teaspoon baking powder
- 3 eggs
- Ice cream or sweetened whipped cream for serving, optional.
Raisin Squares

Bring raisins and water to a boil
- 1 box raisins
- 3 Tbsp flour blended in a small amount of water

Mediterranean Three Bean Soup

Heat oil over moderate heat in large pot
- 1/3 cup olive oil
- 1 small onion, chopped fine
- 2 large cloves garlic, minced
- 2 stalks celery, chopped fine
- 4 cups chicken broth
- 1 tsp thyme
- 1 tsp marjoram
- 1 bay leaf
- Pepper to taste
- 1 1/2 cups cooked kidney beans
- 1 1/2 cups cooked chickpeas
- 1 1/2 cups cooked northern beans
Five Hour Stew

Place all ingredients in heavy casserole
- 2 lbs lean chuck, veal, or lamb, cubed
- 1 24-oz can V-8 juice, or 2 cups tomatoes
- 6 carrots, cut up
- 1 cup celery, diced
- 3 medium onions, sliced
- 3 cubed potatoes, if desired
- 1 Tbsp sugar
- 3 Tbsp minute tapioca
- 1 small can mushrooms, drained, or 1 5-oz can water chestnuts, drained and sliced
Fruit Salad

Bring dressing ingredients to boil over medium heat, then cook one minute longer
- Dressing:
- 1 can chunk pineapple, drained
- 1 can mandarin oranges, drained
- 3-4 apples, diced
- 2-3 bananas, diced
- 3/4 cup pineapple juice
- 1/2 cup sugar
- 1/3 cup orange juice
- 2 Tbsp cornstarch
- 1 Tbsp lemon juice
Taco Bake

About 45 minutes before serving: Cook ground beef and onions until beef is browned and onions are tender
- 2 lbs ground beef
- 1 1/2 cups fresh or frozen chopped onions
- 1 15-oz can tomato sauce
- 1 15-oz can red kidney beans, drained
- 2 tsp chili powder
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 1 5-oz package ready-to-eat taco shells (12 shells)
- 2 cups shredded cheddar or Monterey Jack cheese
- 1/2 small head iceberg lettuce, coarsely chopped
- 2 medium tomatoes, cut into 1/2 inch pieces

- 1 1/2 cup heavy cream
- 2 cups confectioner's sugar
- 1 1/2 tsp vanilla
- 1 can or jar cherry pie filling
