Poached Salmon Steaks

Combine all ingredients except salmon
- For salmon:
- 4 cups water
- 1/2 cup dry white wine
- 2 Tbsp lime juice
- 2 slices onion
- 1/2 cup carrot slices
- 1/2 cup celery slices
- 2 sprigs parsley
- 8 whole peppercorns
- 1 tsp salt
- 1 bay leaf
- 2 salmon steaks or fillets
- For lime sauce:
- 1 Tbsp butter
- 1 Tbsp flour
- 3/4 cup poaching liquid
- Dash of dill weed
- Salt and pepper

Mix together all ingredients
- 1/3 cup toasted sliced almonds
- 6 strips bacon, crumbled
- 3/4 cup mayonnaise
- 1 1/2 cups sharp cheddar cheese, grated
- 1 tsp finely minced onion
- 1/4 tsp salt
Spicy Butternut Squash

Pare squash and cut into 1 1/2" cubes
- 2 medium butternut squash (about 1 pound each)
- 1/4 cup butter or margarine
- 3 Tbsp brown sugar
- 1 tsp ground ginger
- 1 Tbsp grated orange rind
- 1/4 tsp freshly grated nutmeg, plus extra for garnish
- 1 cup whipping cream
Manhattan Meatballs

Combine meat, crumbs, onion, eggs, parsley, and salt, mix lightly
- 2 lbs ground beef
- 2 cups soft bread crumbs
- 1/2 cup chopped onions
- 2 eggs
- 2 Tbsp chopped parsley
- 2 tsp salt
- 2 Tbsp margarine
- 1 10-oz jar apricot preserves
- 1/2 cup barbecue sauce
Salmon Souffle

Melt the butter in a saucepan, stir in flour, and blend with a wire whisk
- 3 Tbsp butter
- 3 Tbsp flour
- 1 cup milk
- 4 eggs, separated
- Salt, dry mustard, and Worcestershire sauce to taste
- 1 cup fresh cooked salmon, or 1 small can salmon, drained
Chilled Asparagus in Dilled Mustard Sauce

Snap the very bottom-most ends from the asparagus spears, leaving the spears long and whole
- 1 lb fresh asparagus
- 1/4 cup mayonnaise
- 1/3 cup Dijon mustard
- 2 heaping Tbsp each fresh dill and fresh chives, minced
- Salt and freshly ground black pepper, to taste
Gourmet Mushrooms

Combine everything. Bring to a slow boil on medium heat
- 4 lbs mushrooms
- 1 lb butter
- 1 bottle burgundy
- 1 1/2 Tbsp Worcestershire sauce
- 1 tsp dill seed
- 1 tsp ground pepper
- 2 small cloves minced garlic
- 2 cups boiling water
- 3 beef bouillon cubes
- 3 chicken bouillon cubes
Stuffed Peppers

Cook peppers and peel. Cook meat with onion, drain
- 6 peppers
- 1 lb ground beef
- 2 Tbsp chopped onion
- 1 cup cooked rice
- Salt
- 1/8 tsp pepper
- 1 15-oz can tomato sauce

- 2 cups flour
- 3 tsp baking powder
- 1 tsp salt
- 2 Tbsp sugar
- 2 eggs, separated
- 1 1/2 cups milk
- 6 Tbsp melted shortening or oil
Cauliflower Soup

In a 2-quart pan, combine onion, potato and water, cover and cook until potatoes are tender, 5-7 minutes
- 1/2 cup chopped onion
- 3 oz peeled potatoes, diced
- 1 cup water
- 1 cup milk
- 4 tsp flour
- 1 tsp salt
- Dash white pepper
- Dash nutmeg
- 1 head of cauliflower, chopped, cooked till tender
- 2 oz American cheese, diced
- 1 Tbsp chopped fresh parsley
