Momaima Cookies

Put 1/2 cup butter, granulated sugar, unsweetened chocolate, and vanilla in top of double boiler
- 1 cup butter, at room temperature
- 1 square unsweetened chocolate
- 1 tsp vanilla
- 1/4 cup granulated sugar
- 1 egg, beaten
- 2 cups graham cracker crumbs
- 1/2 cup chopped walnuts
- 1 cup flaked coconut
- 2 Tbsp instant vanilla pudding mix
- 3 Tbsp milk
- 2 cups confectioner's sugar
- 6 oz semi-sweet chocolate
- 1 1/2 Tbsp oil
Spiced Pecans

Beat egg white with water until frothy
- 1 egg white
- 1 Tbsp water
- 1 lb pecans
- 1 cup sugar
- 1 tsp cinnamon
- 1 tsp salt
Split Pea Soup with Kielbasa

In a heavy kettle cook the onion in the butter over low heat until softened
- 1 onion, halved lengthwise and sliced thinly crosswise
- 2 Tbsp butter
- 1 lb dried split peas, picked over and rinsed
- 2 cups sliced carrots, plus 1/3 cup grated for garnish
- 3/4 cup sliced celery
- 1 lb kielbasa, cut into 1 1/2 inch lengths
- 1 bay leaf
- Croutons for topping
Whiskey Sour

- 6 oz lemonade (frozen)
- 12 cubes ice
- 1 cup water
- 4 oz bourbon
- 1 egg
- 2 tsp sugar

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper
- 250 - 250 grams (9 ounces) unsweetened dried coconut flakes
- 160 - 160 grams (3/4 cup plus 1 tablespoon) sugar (I use unrefined cane sugar)
- - a fat pinch of salt
- 3 - 3 medium egg whites
Baked Macaroni and Cheese

In saucepan, melt butter. Remove from heat
- 2 Tbsp butter or margarine
- 2 Tbsp flour
- 1 tsp salt
- 1 tsp dry mustard
- 2 1/2 cups milk
- 2 cups shredded cheese
- 8 oz elbow macaroni (2 cups)
- 1/4 cup buttered bread crumbs
- Paprika
Triple-Cocount Macaroons

1) Adjust oven racks to upper-middle and lower-middle and preheat oven to 375 F
- 1 c. cream of coconut
- 2 T. light corn syrup
- 4 large egg whites
- 2 t. vanilla
- 1/2 t. salt
- 3 c. (8oz) unsweetened, shredded, dried coconut
- 3 c (8oz) sweetened flaked or shredded coconut
- good semi-sweet chocolate, for dipping
Fish Baked in Foil

Divide onion, celery, and carrots among 4 pieces of foil, place a fillet on top
- 4 12" squares aluminum foil
- 1 cup onion, minced
- 1 cup celery, thinly sliced
- 1 cup carrots, thinly sliced
- 4 white fillets
- 1 1/3 cups fish stock or clam juice
- 1/2 cup white wine
- Salt and pepper to taste
