Ingredients
- 3 Tbsp olive oil
- 1 1/2 lbs cod sticks or fillets about 1 inch thick
- Salt and pepper
- 1 medium fresh tomato, chopped
- 1 small green pepper, chopped
- 1/2 cup chopped scallions
- 1 clove garlic, minced
- 1 tsp lemon juice

Preparation
Step 1
Coat baking dish with 1 Tbsp olive oil. Add fish. Sprinkle with salt and pepper.
In a small bowl, stir together remaining ingredients. Spoon over fish.
Cover dish lightly with foil. Bake at 425 degrees until fish is cooked through, about 20 minutes.
