Grammy's recipes: Crab Dip

Mix all ingredients. Thin with milk, if desired
- 1 cup crab meat
- 1 3-oz package cream cheese, at room temperature
- 1 Tbsp chili sauce
- 2 Tbsp mayonnaise
- 7 drops Tabasco
Escarole Soup with Meatballs
By kstetler
Mix together all ingredients for meatballs and form into 3/4 inch balls
- Meatballs:
- 1/2 lb lean ground beef
- 1 clove garlic, pressed
- 1 1/2 Tbsp Parmesan cheese
- 1 egg, beaten
- 1/2 tsp salt
- 1/4 tsp pepper
- Soup:
- 2 cups chicken broth
- 2 cups beef broth
- 1 Tbsp ketchup
- 1 head escarole, chopped
- 1 onion, diced
- 1 potato, peeled and diced
- 1 Tbsp minced fresh parsley
Potatoes with Cheese

Rub a 10" pan with garlic and discard
- 1/2 clove cut garlic
- 6 Tbsp butter
- 2 lbs potatoes
- 4 oz Gruyere or Swiss cheese
- 1 cup canned beef bouillon
Anne's Baltimore Crab Cakes

Combine mayonnaise, mustard, salt and pepper, nutmeg, and eggs
- 3 Tbsp mayonnaise
- 2 tsp dry mustard
- Dash of pepper
- 1 tsp salt
- Dash nutmeg
- 2 eggs, beaten
- 1/4 cup onion, finely chopped
- 1/4 cup green pepper, finely chopped
- 2 Tbsp chopped parsley
- 1/2 cup breadcrumbs
- 1 lb crab meat
Marinated Carrots

Cook all marinade ingredients together and pour over vegetables
- Marinade:
- 2 lbs sliced carrots, cooked
- 1 diced onion
- 1 diced green pepper
- 1 can tomato soup
- 1/2 cup sugar
- 1/2 cup oil
- 3/4 cup white vinegar
- 1 tsp dry mustard
- 1 tsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp pepper
Tomato Jam

Scald, peel and chop tomatoes
- 3 cups prepared tomatoes (about 2 1/4 lb fully ripe)
- 1 1/2 tsp grated lemon rind
- 1/4 cup lemon juice
- 6 1/2 cups sugar
- 1 bottle Certo fruit pectin
Make-Ahead Baked Potatoes

Peel and cook potatoes until soft
- 9 large potatoes
- 8 oz cream cheese
- 1 cup sour cream
- 2 tsp onion salt
Jalapeno Pepper Jelly

Combing first four ingredients and bring to a boil
- 1 cup green bell peppers, minced
- 1 7-oz can jalapeno peppers, chopped and seeded
- 6 1/2 cups sugar
- 1 1/2 cups white vinegar
- 1 12-oz bottle Certo fruit pectin
- Green food coloring
Beef Bourguignon

Roll beef cubes in flour to coat lightly
- 5 lbs chuck beef, cut into cubes
- 1/2 to 1 stick butter
- 6 Tbsp olive oil or salad oil
- 3 cloves garlic, coarsely chopped
- 3 medium onions, coarsely chopped
- 2 carrots, peeled and chopped
- 1 to 2 tsp thyme
- 1 bay leaf
- Salt and pepper
- 1 bottle Burgundy
- Small whole onions (as many as you want)
- 1/2 lb fresh mushrooms, sliced
- Juice of 1/2 lemon
- Orange sections
Double Chocolate Treasures

Heat oven to 350 degrees. Melt 1 cup chocolate pieces
- 1 12 oz package semi-sweet chocolate bits
- 1/2 cup margarine
- 3/4 cup sugar
- 2 eggs
- 1 tsp vanilla
- 2 cups Quaker Oats (quick or old fashioned, uncooked)
- 1 1/2 cups flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup powdered sugar
