Ingredients

    Tbsp butter

  • 2

    Tbsp flour

  • 3

    cups lobster, chopped

  • 1/8

    tsp nutmeg

  • Dash paprika

  • 1

    tsp salt

  • 3

    Tbsp sherry (optional)

  • 3

    egg yolks

  • 2

    cups cream

Directions

Melt butter in top of a double boiler, stir in flour. Add lobster, seasonings, and sherry. Beat egg yolks slightly, add cream, and mix well. Stir slowly into lobster and cook, stirring constantly, until thickened. Serve on toast. Or pour in individual baking dishes and sprinkle with butter and soft bread crumbs. Brown under broiler.
