Bourbon Banana Bread

Pecans can be interchanged with walnuts and you can substitute butterscotch chips instead of chocolate
- 1 3/4 cups all-purpose flour
- 1/4 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup butter, softened
- 2 eggs, well-beaten
- 2/3 cup sugar
- 1 cup mashed ripe bananas (about 3-4)
- 2 TBSP bourbon
- 1/2 tsp lemon juice
- 3/4 cup mini chocolate chips
- 3/4 cup chopped pecans
Corn Pudding

In a large bowl, beat eggs
- 4 tablespoons butter, melted
- 2 eggs
- 2 (15-17 oz.) cans corn, whole, drain water
- 2 (15-17 oz.) cans cream-style corn
- 1/4 cup plus 2 tablespoons flour
- 1/3 cup cornmeal
- 1 tablespoon sugar
- 1 cup grated cheddar cheese
Easy Country Potato Casserole

Spread frozen hash browns in pan
- 2 lb bag of frozen cubed hash browns
- 1 can cream of chicken soup
- 1 (8 oz) jar cheese whiz
- 1 (8 oz) sour cream
- 2 cups crushed corn flakes
- 1/4 cup chopped onion
- 1 1/2 sticks of butter
Ham and Cheese Potato Bake

In a bowl, put hash browns, onion and ham
- 24 oz fat-free frozen hash browns
- 2 cups fully cooked ham
- 1/2 cup low calorie cheddar cheese
- 1 onion
- 2 cups fat-free sour cream
- 1 can condensed cheese soup
- 1 can condensed cream of potato soup
- 1 tsp salt
- 1 tsp pepper
Hashbrown Casserole

In large bowl, combine the soup, sour cream and garlic salt
- 2 (10 3/4 oz.) cans or 1 lg. can cream of potato soup
- 1 cup (8 oz.) sour cream
- 1 (2 lb.) pkg. frozen hash brown potatoes
- 2 cups (8 oz.) shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
Yellow Squash Casserole

Preheat oven to 350. Dice squash and boil until tender, about 10-12 min
- 1 (8 oz) package bread crumbs
- 1/2 cup butter, melted
- 1 1/2 lb. yellow squash
- 1 onion
- 1 can water chestnuts; drained
- 1 (8 oz) tub sour cream
- 1 can cream of chicken soup
- salt and pepper, to taste
Tater Tot Casserole

- 1 lb. lean hamburger
- 1/2 bag Tater Tots
- 1 can cream of chicken soup
- 1 can or sm. pkg. frozen veggies, corn or green beans work well
- 1/4 cup ketchup
Zucchini and Potato Pie

Cook potatoes in boiling water, lightly salted water about 25-30 minutes, until tender
- 1 lb potatoes (about 3 med)
- 2 tbsp butter, divided
- 2 eggs
- 8 oz grated Mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 large zucchini, grated
- 1/4 cup minced onion
- 1/4 tsp salt
- 1/4 tsp pepper
- 2 tbsp fine dry bread crumbs, divided
Tomato Breakfast Toasts

- 2 large ripe tomatoes

- 1/2 cup low-fat milk
- 1 teaspoon Dijon mustard
