Coconut Flour Double Chocolate Cupcakes

(Grain/Nut,/Dairy Free, Honey Sweetened)
- Dry ingredients:
- 1/2 cup coconut flour or 2 oz by weight (use dip and sweep method*)
- 6 tablespoons cocoa powder
- 1/4 tsp salt
- 1/4 tsp baking soda
- 1/2 cup liquid coconut oil or palm shortening
- 1/2 cup honey
- 2 teaspoons vanilla extract
- 2 teaspoons apple cider vinegar or coconut vinegar
- 6 whole large eggs
- 1/4 cup (or more) Enjoy Life mini Chocolate Chips
Gluten Free Breakfast Pizza

- Ingredients (serves 6)
- Crust
- 2 cups blanched almond flour
- 1/4 teaspoon salt
- 1 egg
- 2 tablespoons melted butter or coconut oil
- 1 tablespoon cold water
- 1 tablespoon chopped chives
- For the Pizza
- 1/4 cup Crème fraîche (scd legal), or Greek yogurt
- 1/4 cup shredded Gruyère cheese
- 7 bacon slices, cooked until crisp
- 4 eggs
- fresh chives
- salt and pepper
Pumpkin Bread- SCD/Gluten Free

Method 1.Preheat your oven to 350 degrees F
- 1/2 1/2 1/2 cup of pumpkin puree* (canned or fresh; butternut squash is my favorite)
- 1/2 1/2 1/2 cup of honey (or other sweetener; I used maple syrup)
- 2 2 2 eggs
- 3/4 3/4 3/4 teaspoon of baking soda
- 1/2 1/2 1/2 teaspoon of salt
- 1/2 1/2 1/2 teaspoon nutmeg
- 1/2 1/2 1/2 teaspoon cinnamon
- 1/2 1/2 1/2 teaspoon cloves
- 1/2 1/2 1/2 teaspoon of ginger
- 2 2 2 cups of almond flour
- 1/2 1/2 1/2 cup of walnuts & raisins (optional)
- Pumpkin Puree
- 1 1 to .Slice the pumpkin (or other squash, butternut squash is the sweetest, in my opinion) in half (from stem to bottom), take out the seeds (and make toasted seeds).
- 3 3 3 .Cool the pumpkin, peel the skin off, and puree it in a blender or food processor.
Salt and Vinegar Broiled Fingerling Potatoes

- Adapted from Martha Stewart Living, June, 2009. Cooked in 2 cups of vinegar, the potatoes taste very tangy (which some people love). For a milder version, try one cup white or malt vinegar and one cup water.

- A scant less than 1/2 teaspoon salt
- 6 tablespoons honey
- 1/4 cup coconut oil, softened or liquid
- 1 tablespoon vanilla
- 1 teaspoon Lemon juice
- 3 whole large room temp eggs
- 1 can full-fat coconut milk (about 1 1/2 cups), I used guar gum-free Natural Value
- 1/2 cup mild flavored honey or maple syrup,
- A pinch of sea salt
- 1 rounded tablespoon ghee or butter (can sub palm shortening or coconut oil)
- 2 teaspoons vanilla extract
- 1/4 cup finely shredded coconut, plus 2 more tablespoons for garnishing
- 1 bag Enjoy Life Chocolate chips (melted in a double boiler)

In a stand-mixer bowl, weigh out the flours to a total of 12 ounces

- ◾12 ounces gluten-free flour: (3 oz. superfine brown rice flour, plus 2 oz. gluten-free oat flour, plus 2 oz. superfine white rice flour plus 1.5 oz. millet flour plus 1 oz. sweet rice flour, plus 1.5 oz. potato starch, plus 1 oz. teff flour.
- ◾2 ounces dry milk powder
- ◾1 tablespoon sugar
- ◾1 teaspoon salt
- ◾one packet yeast – not rapid rise! (about 2 teaspoons)

- ◾generous 8 oz. water, warm

Chocolate Chip Scones

Place rack in top third of oven and pre-heat oven to 375°
- 1 bag Pamela's Biscuit & Scone Mix
- 1/2 cup sugar
- 8 TBSP butter or or butter alternative, cut in 1/2” pieces/well chilled
- 1 cup milk, soy, rice, or almond milk
- 1/4 cup chocolate chips
- 1/4 cup chopped nuts (optional)
- Optional: brush with milk and sprinkle with sugar before baking
Strawberry Shortcake Rice Krispie Treats

- 1 heaping cup angel food cake squares
- 2 1/4 c. marshmallows
- 1 1/2 tbsp butter
- 1 c whipping cream
- 2-3 tbsp sugar (depending on how sweet you like it)
- 1 tsp vanilla
