Parkerhouse Rolls | Better Batter Gluten Free Flour

These rolls lend themselves particularly well to freezing and reheating
- 2 1/2 cups milk or DF substitute
- 1/3 cup sugar
- 2 t. salt
- 4 T unsalted butter or df margarine (we recommend Fleischmann’s unsalted)
- 1 package of yeast
- 1 egg
- 3 1/4 – 4 cups (13-16oz or 368-453g) Better Batter Gluten Free Flour
- Butter or df margarine, melted (about 2 sticks)
Triple Protein Burgers

Instructions Preheat oven to 350 degrees
- 1 pound ground beef
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- salt and pepper, to taste
- 8 strips of bacon
- 4 hot dogs (nitrate and filler free- I used Coleman Natural hot dogs)
- 1/2 white onion, thinly sliced
- 1 avocado, sliced
- 5-6 tablespoons leftover homemade mayo
- head of romaine lettuce

1) Combine all of the ingredients in a large microwave-safe bowl
- 1 cup freshly squeezed lemon juice
- 1 cup sugar
- 1/2 cup (8 tablespoons) butter, melted

Instructions Pull out your crockpot
- 1.5-2 lbs Grass Fed Beef Rump Roast, trimmed of extra fat (if you’d like)
- 6-8 garlic cloves, peeled
- 2-4 bay leaves
- 1/4 cup apple cider vinegar
- 1/4 cup vegetable broth
- 1 yellow onion, roughly chopped
- 1/2 red onion, roughly chopped
- 1 tablespoon cumin
- 2 chipotle peppers in adobo sauce, roughly chopped
- 1 tablespoon adobo sauce (from the can of chipotle peppers)
- 1 container of chopped mushrooms (optional)
- salt and pepper, to taste
- 1 16oz can tomato sauce
- 1 12-16oz can green chiles
- 1 tablespoon chipotle chili powder
- 2 teaspoons cayenne pepper
- 1 teaspoon ground red pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ground cloves

- 1 slice Canadian bacon
- 2 large eggs
- 1 tsp water
- 3 TBSP buttermilk
- 1/3 cup Pamela's Bread Mix
- 1 tsp baking powder
- Hollandaise sauce-store bought (Trader Joe's makes a great one that comes refrigerated)
Raspberry Coconut Macaroons

(Paleo, Dairy/Gluten/Egg/Refined Sugar Free)
- 3/4 cup very fine ground blanched almond flour (like Honeyville)
- 1 1/2 cup “Let’s Do Organic” unsweetened shredded coconut*
- 3/4 cup(about 28g) freeze dried raspberries or other flavor (strawberries are great too)
- 1/4 cup plus 1 tablespoon raw honey or vegan alternative
- 1/4 cup coconut oil, liquid
- 2 teaspoons vanilla extract
- Pinch of unrefined sea salt
- optional: natural color if desired (I like 1/2 teaspoon concentrated beet juice)
- I always use the "Let's Do Organic" brand for my macaroons as it is very finely shredded. Results will vary from brand to brand.

- Ingredients:
- Yield: serves 2-4
- Total Time: 30 minutes
- 1 small baguette, cut into slices
- 2 tablespoons unsalted butter
- 1 garlic clove, minced
- 3 slices thick-cut bacon
- 1 shallot, diced
- 2 garlic cloves, minced
- 2 zucchini, cubed
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/4 teaspoon smoked paprika
- 2 ounces goat cheese
- 2-4 eggs, cooked to your liking
Cranberry Scones with Jam and Creme Fraiche

Place rack in top third of oven and pre-heat oven to 375°
- 1 bag Pamela’s Biscuit and Scone Mix
- 1/2 cup sugar
- 8 TBSP butter or butter alternative, cut in 1/2" pieces and well-chilled
- 1 cup milk, soy, rice, or almond milk
- 1/2 cup dried cranberries
- 1/4 cup chopped nuts (optional)
- Optional: brush with milk and sprinkle with sugar before baking
Almond Flour Cinnamon Rolls – Low Carb and Gluten-Free

1.Preheat oven to 325F and grease an 8-inch round cake pan with butter
- Dough:
- 2 cups almond flour
- 3 tbsp granulated erythritol (I used Swerve)
- 3 tbsp unflavored whey protein powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp xanthan gum
- 2 large eggs, lightly beaten
- 1/4 cup butter, melted
- Filling:
- 1 tbsp butter, melted
- 2 tbsp brown sugar substitute (I used Ideal)
- 1 tsp cinnamon
- Cream Cheese Icing
- 2 oz cream cheese, softened
- 1 tbsp powdered erythritol (I used Swerve)
- 1 tbsp heavy cream
- 1/4 tsp vanilla extract
