- 2 1/2 2 1/2 1/2 cups (350 g) Gluten Free Bread Flour*, plus more for sprinkling
- 1/4 1/4 1/4 cup (33 g) coarsely ground yellow cornmeal
- 1 1/3 1 1/3 1/3 teaspoons (4 g) instant yeast
- 2 2 2 teaspoons (8 g) granulated sugar
- 2 2 2 teaspoons (12 g) kosher salt
- 1/4 1/4 1/4 cup (56 g) neutral oil
- 3/4 3/4 95°F) cup (6 fluid ounces) warm water (about 95°F)
- Dough Without Bread Flour
- 2 2 2 cups (280g) all-purpose gluten-free flour (I highly recommend (mock) Better Batter here), plus more for sprinkling
- 1 1/2 1 1/2 1/2 teaspoons xanthan gum (omit if your blend already contains it)
- 1/4 1/4 1/4 cup (33 g) coarsely ground yellow cornmeal
- 1 1 1 tablespoon (9 g) instant yeast
- 1 1 1 tablespoon (12 g) granulated sugar
- 2 2 2 teaspoons (12 g) kosher salt

- 1/3 cup superfine sugar
- 3 extra large eggs, yolks and whites separated
- 1 tsp vanilla extract
- 1 cup GF flour
- 2 tsp baking powder
- 1 pinch salt
- 1/2 cup coconut milk
- For the Topping:
- 3 egg whites
- 1/3 cup superfine sugar
- 1 cup dried coconut

1. Prepare cooking sauce and set aside
- 2 lb chicken breast, boneless
- 2 Tbs soy sauce
- 2 tsp cornstarch
- 6 Tbs oil
- 1 cup walnuts, chopped medium
- 2 green bell , chunked
- 1 tsp fresh ginger root, grated
- 1 1/2 tsp sugar
- 1 1/2 tsp wine vinegar
- 2 tsp sherry
- 1 Tbs soy sauce
- 1 dash hot pepper sauce

1. Sauté onion and chilies in hot oil for 6-8 mins, or until tender
- 1 Tbs olive oil
- 1 onion, chopped
- 3 Serrano chilies, seeded and minced
- 2 14 oz. cans black beans
- 1/4 tsp cumin
- 1/8 tsp cayenne pepper
- 1 cup rice, uncooked
- 1 3/4 cup chicken broth
- 3 cloves garlic, minced

Blueberry and Corn Salsa

In a mixing bowl, combine vinegar, lime juice, sugar, and salt
- Yield: 4-6 servings.

- 2 teaspoons fresh lime juice
