Ingredients

  • 1 cup quinoa, soaked overnight, drained, and rinsed (see note)
  • 1 ⁄4 cup low-sodium vegetable broth
  • 1 ⁄4 teaspoon chili powder
  • 1 ⁄4 teaspoon sea salt, plus more as needed
  • 1 ⁄4 teaspoon freshly ground black pepper, plus more as needed
  • 2 tablespoons extra-virgin olive oil, plus more for drizzling

Preparation

Step 1

Make the crust: Preheat the oven to 350°F.

Place the quinoa in a food processor with the broth, chili powder, salt, and pepper and process until smooth.

Heat a large cast-iron skillet in the oven for 5 minutes. Add the oil and swirl to coat the skillet, then heat for another 5 minutes. Add the quinoa mixture to the skillet and press it evenly into the bottom of the pan. Bake until set, about 15 minutes. Using a spatula, flip the crust over and bake until golden brown, another 12 to 15 minutes.

Bake for an additional 8 minutes after adding toppings.

Cooks Note:

Despite the fact that most folks say soaking is not necessary for quinoa, it will not work if the quinoa is not soaked overnight. If you want to prepare the crust in advance, remove it from the oven before adding any toppings and let cool. When ready to serve, preheat the oven, add toppings, and bake as instructed.
