Sweet & Sour Beef-Cabbage Soup

Heat oil in a Dutch oven over medium heat
- 1 tablespoon canola oil
- 1 pound lean (90% or leaner) ground beef
- 1 1/2 teaspoons caraway seeds
- 1 teaspoon dried thyme
- 2 1/2 cups frozen bell pepper and onion mix, thawed, chopped
- 1 medium Golden Delicious or other sweet-tart cooking apple, unpeeled, diced
- 6 cups reduced-sodium beef broth
- 1 15-ounce can crushed or diced tomatoes
- 1 1/2 tablespoons honey
- 1 tablespoon paprika, preferably Hungarian sweet
- 3 cups coarsely chopped Savoy, or green cabbage
- 1-2 tablespoons cider vinegar
- 1/4 teaspoon salt
- Freshly ground pepper to taste

Lemon Fluff

This Lemon Fluff is made with pudding, not Jello like most of the others call for
- FOR THE CRUST:
- 1 1/2 cups Flour
- 1 1/2 sticks Butter
- 1/2 c. Pecans
- FOR THE BASE LAYER:
- 2 C. Powdered Sugar
- 8 oz. Cool Whip
- 8 oz. Cream Cheese
- FOR THE MIDDLE LAYER:
- 3 3oz. packages Instant Lemon Pudding
- 1 1/2 c Milk
- FOR THE TOPPING:
- 1 carton Cool Whip
- Chopped Pecans (optional)
Herbed Bulgur and Lentil Salad

This salad is even better the longer it sits in the fridge, so we love to make a big batch of it and eat it through...
- Optional additions (calories not included in total but are noted below):
- 1 c dry lentils, preferably green or yellow
- 2 c water
- 1 c dry bulgur
- 1 c boiling water
- 1/4 c olive oil
- 1/4 c lemon juice
- 2 cloves garlic, crushed
- 1 t salt
- 2 T mint, chopped
- 2-3 T dill, chopped
- fresh black pepper, to taste
- 1/4 c parsley, chopped
- 1/3 c red onion, finely chopped
- 1 bell pepper, diced
- 1 stalk celery, finely chopped
- 1/2 c crumbled feta cheese (add 25 calories, 2 g fat per appetizer-size serving)
- 1/2 c niçoise or other black olives (add 10 calories, 1 g fat)
- 1 tomato, diced
- 1/2 c walnuts, toasted and chopped (add 50 calories, 5 g fat)
- squeezable wedges of lemon, for garnish

French Toast Casserole, GF

Melt butter/Buttery Sticks and pour to cover the bottom of a 9×13 baking dish
- topping:
- 1/3 cup (5 Tbs) butter or non-dairy alternative (Earth Balance® Buttery Sticks)
- 2/3 cup brown sugar or coconut palm sugar
- 1 loaf gluten-free sandwich bread or French bread (3-5 days old/stale or thawed from frozen works best)
- 6 eggs (or 1 1/2 cups apple butter, canned pumpkin or mashed bananas)
- 1 1/4 cups soy or coconut nog (note: if using egg substitutes above, add extra 1/4 – 1/2 cup nog to thin the mixture) OR your favorite cream or milk
- 2 tsp. pure vanilla extract
- 2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. sea salt
- 1/2 cup chopped pecans (optional)
- 1/2 cup fresh blueberries (optional)
- confectioner’s sugar for dusting (optional)
- pure maple syrup if serving for breakfast

Tarragon Lemon Chicken, GF

This stress-free dish is based on one of my favorite flavor pairings—golden roast chicken and tarragon
- 4 pounds skin-on, bone-in chicken pieces (choose thighs for moisture)
- 1 tablespoon extra-virgin olive oil
- Sea salt and cracked black pepper
- 10 small sprigs tarragon
- 1 tablespoon finely grated lemon zest
- 3 cloves garlic, sliced
- 2 fennel bulbs, trimmed and sliced
- 1/2 cup dry white wine

- 1 1/2-2 1 1/2-2 to cups flaked coconut (sweetened or unsweetened, to your taste; either amount of coconut will work)
- 2 2 2 cups milk (dairy or nondairy – coconut milk is the obvious, but not required, choice)

Mixed Vegetable Tihari

Sauté onion in oil until crisp and golden brown
- 1/2 cup fair trade olive oil
- 2 onions, chopped
- 1 tsp fresh ginger, grated
- 2 cloves garlic, diced
- 1 tbsp chili powder
- 1 tsp turmeric
- 3 whole cloves
- 3 potatoes, chopped
- 2 carrots, peeled and chopped
- 1 cup peas
- 1 cup green beans, chopped
- 4 green chilies, whole
- 2 1/2 cups white rice
- 4 cups water
- 1/4 cup lemon juice
- Salt to taste
