Alfajores de Dulce de Leche

A wonderful recipe that I got when I took a cooking class in Buenos Aires
- For the Cookies
- 200 gms Butter 1 cup
- 150 gms. Sugar 3/4 cup
- 2 eggs
- 1 egg yolk
- 1 tsp Vanilla
- 2 tsp grated lemon peel
- 2 Tbs. Cognac
- 300 gms Cornstarch 1 1/2 cups
- 200 gms flour 1 cup
- 1 tsp baking soda
- 1/4 tsp salt
- For the Filling
- 300 gms Dulce de Leche 1 1/2 cups
- 50 gms grated coconut 1/4 cup

These fluffy, paleo-friendly pancakes are free of refined sugar and can be made without dairy
- Ingredients:
- 1 1 1/2 + 1/2 cups blanched almond flour
- 1 1 1 tablespoon tapioca starch/flour
- 1/2 1/2 1/2 teaspoon baking soda
- 1/4 1/4 1/4 teaspoon salt
- 2 2 2 large eggs
- 1/4 1/4 1/4 cup pure maple syrup
- 2 2 2 teaspoons pure vanilla extract
- 1/4 1/4 1/4 cup milk of choice
Chicken with Coconut Milk

Directions Heat the oil in a medium sauce pan, over medium heat
- 4 Chicken drums, bone in and skin on.
- 1 tablespoon vegetable oil
- 1/4 cup chopped onion
- 1 garlic clove, minced
- 1/4 chopped red bell pepper
- 1 chicken bouillon tablet
- 1/2 teaspoon cumin powder
- 1 tablespoon tomato paste
- 1 (13.5 oz) can coconut milk
- Salt and pepper
- Cilantro for garnish
- White rice for serving

- 1 package Chocolate Wafer cookies
- 1/4 cup sugar
- 1 stick melted butter
- 1 14 oz. can sweetened condensed milk
- 1 10 oz. package raspberry chips
- 1 12 oz. package white chocolate chips
- 1 1/2 cups macadamia nuts, coarsely chopped
- 1 cup sweetened coconut
Maple Sweet Potato Cakes with Curried Greek Yogurt

- Curried Greek Yogurt
- 1 container (7 ounces) 2% Greek yogurt
- 1/2 teaspoon curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- Maple Sweet Potato Cakes
- 1 large sweet potato, peeled and shredded
- (shred well on food processor shred disk)
- 1/2 teaspoon kosher salt
- 1 egg
- 1-1/2 tablespoons maple syrup
- 1/2 teaspoon ground white pepper
- 1/2 teaspoon paprika
- 1 pinch of cinnamon
- 1/3 cup minced yellow onion
- 1/3 cup panko breadcrumbs
- Nonstick cooking spray

Boston Baked Beans

This is a great slow cooker side dish for backyard barbecues!
- 1 pound dry white Northern beans
- 1 c onion, diced fine
- 2 slices bacon cut into small pieces
- 1/4 c brown sugar
- 1/4 c dark molasses
- 1 T brown mustard
- 2 T ketchup
- 1/2 t salt
- 1/2 t black pepper
- 3 c water
Miracle Cauliflower Soup

This is a fantastic way to sneak veggies into your kids
- 1 head of cabbage (about 10 cups)
- 1 head of cauliflower (slightly larger than cabbage, about 10 cups)
- Enough low sodium chicken broth to almost cover veggies (about 6 14.5 oz ,cans for 20 cups of veggies)
- 1/4 cup, or less, blue cheese crumbles
- freshly ground black pepper to taste- lots!
- optional: up to 1/2 cup roasted red pepper
