- 3 3 3 cups (420 g) all purpose gluten free flour (I used Better Batter)
- 1 1/2 1 1/2 1/2 teaspoons xanthan gum (omit if your blend already contains it)
- 1/2 1/2 1/2 cup (40 g) unsweetened natural cocoa powder (Dutch-processed also works fine)
- 2 2 2 cups (400 g) granulated sugar
- 1 1 1 teaspoon kosher salt
- 2 2 2 teaspoons baking soda
- 1/2 1/2 1/2 teaspoon ground cinnamon
- 12 12 12 tablespoons (168 g) virgin coconut oil, melted (or vegetable oil)
- 2 2 2 tablespoons white wine vinegar
- 2 2 2 teaspoons pure vanilla extract
- 2 2 2 cups (16 fluid ounces) brewed coffee, dry red wine (like Pinot Noir, Merlot or Cabernet Sauvignon), or lukewarm water

A DIFFERENT PEANUT BUTTER COOKIE

Here is the recipe I made 2 times in the past 4 days
- 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk
- 3/4 cup peanut butter (I used chunky)
- 2 cups biscuit mix
- 1 teaspoon vanilla extract
- 1/3 About 1/3 cup sugar (the original recipe said to roll the round balls in the sugar, but I just added it to the mix instead)

1. Spice Paste: 2. In food processor combine all ingredients but oil
- WASABI MAYONNAISE:
- FOR THE SPICE PASTE
- 2 serrano chiles, seeded and chopped
- 2 cloves garlic, minced
- 2 green onions including tops
- 1 tsp fresh ginger root
- 1 Roma tomato, chopped
- 2 teaspoons olive oil
- 1/2 cup mayonnaise
- 2 tablespoons plain yogurt
- 1 tsp wasabi
- 2 teaspoons lime juice
- 1 tablespoon cilantro, chopped
- FOR THE SATAY:
- 1 pound ground chicken
- 1/2 cup unsweetened coconut
- 2 tablespoons cilantro, chopped
- 1 egg
- 2 teaspoons brown sugar substitute
- 1 teaspoon lime zest
- 1 teaspoon soy sauce
- 1 teaspoon salt
- 1 tsp pepper
- Servings: 4
- Tips
- Also the original called for the meat to be shaped around skewers. I did this the first and came to the conclusion it was done for presentation for the contest. Too much work for me. The little loaves work just fine!

- 1/4 cup butter
- 3 oz Boursin Garlic-Herb cheese
- 3 oz sharp cheddar cheese, grated
- 1 egg, beaten
