Quick Shrimp Enchilada Bake

Preheat oven to 425°F. Coat a 9-by-13-inch glass baking dish with cooking spray
- 1 pound peeled cooked shrimp, tails removed, diced
- 1 cup frozen corn, thawed
- 2 4-ounce cans chopped green chiles, (not drained)
- 2 cups canned enchilada sauce, or green salsa, divided
- 12 corn tortillas
- 1 15-ounce can nonfat refried beans or black beans
- 1 cup reduced-fat shredded cheese, such as Mexican-style cheese blend, Monterrey Jack or Cheddar
- 1/2 cup chopped fresh cilantro
- 1 lime, cut into wedges
Easy Chicken and Dumplings

- 1 small Onion, chopped
- Black peppercorns and fresh chopped Parsley (optional)
- 3 Carrots, sliced
- 2 1/4 cups Bisquick baking mix
- 3/4 cup Milk
- 2 ounces Grated Parmesan Cheese
- 1/2 tsp. Garlic Powder

- 1 11 oz box vanilla wafers
- 1 stick butter, melted
- 1 cup white chocolate chips
- 1 6 oz package Craisins, Orange flavored
- 1/2 cup macadamia nuts, chopped
- 1 cup sweetened coconut flakes
- 1 14 oz. can sweetened condensed milk
- Servings: 20
Pear Crumble

Preheat the oven to 350 degrees
- For the topping
- 1/2 cup plus 1 tablespoon slivered almonds (may substitute 1/2 cup almond meal)
- 1/2 cup old-fashioned rolled oats (do not use quick-cooking or instant)
- 1/4 cup whole-wheat pastry flour (may substitute regular whole-wheat flour)
- 1/4 cup packed light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/4 cup canola oil, or other neutral-tasting oil, plus more for the baking dish
- For the filling
- 3 pounds ripe but firm pears, peeled, cored and cut into 1/4- inch slices
- 1/4 cup pure maple syrup
- 1 tablespoon fresh lemon juice
- 1 tablespoon cornstarch
- 3/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
Banana Bread (gluten free)

- 2 cups Gluten Free All Purpose Baking Flour
- 2 tsp Baking Powder
- 2 tsp Baking Soda
- 2 tsp Psyllium Fiber Powder
- 1 tsp ground Cinnamon
- 1/4 tsp Salt
- 1-1/2 cups mashed ripe Banana about 2 – 3
- 1 cup Sugar
- 3/4 cup Milk
- 1/2 cup melted butter
- 2 Eggs
- 1 tsp Vanilla Extract

Preheat oven to 425°F. Heat 2 teaspoons oil in a large nonstick skillet over medium-high heat
- 4 teaspoons extra-virgin olive oil, divided
- 1 pound boneless, skinless chicken breast, trimmed, cut into 1/2-inch cubes
- 1 cup sliced shallots
- 1 10- or 12-ounce bag frozen mixed vegetables (2-2 1/2 cups), thawed
- 1/4 teaspoon dried thyme
- 2 cups reduced-sodium chicken broth, divided
- 1/4 cup cornstarch
- 1/4 cup reduced-fat sour cream
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper
- 6 sheets 9-by-14-inch phyllo dough, defrosted (follow package directions)
- Cooking spray (olive oil or canola oil)

- 22 egg whites (or 1 whole egg substitute)
