Beef Stew, IP & GF

This flavorful gluten-free stew is great for a weeknight meal or a company dinner
- 2 1/2 pounds boneless beef chuck, cut into 1 1/2 -inch pieces
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 3 tablespoons olive oil, divided
- 2 large or 3 medium yellow onions, cut into thin wedges (about 8 wedges per half)
- 5 teaspoons crushed garlic
- 2 tablespoons red wine vinegar
- 1 1/2 tablespoons tomato paste
- 1/4 cup rice flour or all-purpose gluten-free flour
- 4 cups gluten-free beef broth
- 1/2 cup red wine
- 2 bay leaves
- 6 sprigs fresh thyme
- 2 teaspoons sugar
- 5 large carrots, peeled and cut into 1-inch chunks on a diagonal
- 1 pound small red bliss or yellow potatoes, cut in half
- 1 cup frozen or jarred pearl onions
- Fresh chopped parsley or fresh thyme, for garnish, optional
CCRyder's Rib Rub

"This sweet and spicy rub includes cumin, thyme, rosemary, and lots of heat
- Ingredients:
- 1/3 cup sea salt
- 1/2 cup white sugar
- 1/2 cup packed brown sugar
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons Hungarian paprika
- 3 tablespoons New Mexico red chile powder
- 2 tablespoons ancho chile powder
- 2 tablespoons ground black pepper
- 2 teaspoons cayenne pepper
- 2 tablespoons crumbled dried thyme
- 1 tablespoon crushed dried rosemary
- 2 tablespoons ground cumin
- 1 tablespoon ground nutmeg
- 1 tablespoon ground allspice
Crispy ‘Crack’ Dogs

Instructions Preheat the oven to 400 degrees F
- 8-10 hot dogs
- 1/2 cup apricot preserves
- 1/4 cup honey mustard
- 1 Tbsp fresh rosemary, chopped finely for garnish (optional)

Prepare the couscous according to the package directions; set aside
- 1 10-ounce box couscous
- 1 tablespoon olive oil
- 1 large yellow onion, diced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, diced
- 3/4 cup golden raisins
- 1 28-ounce can whole tomatoes, drained and roughly chopped
- 1 pound shrimp, peeled and deveined
- 2 teaspoons ground cumin
- 1 teaspoon ground cinnamon
- 1 lemon, halved

1. Heat the oil in a large, heavy-bottomed Dutch oven over medium-high heat
- Chicken:
- 3 Tbs canola oil
- 1/3 cup all-purpose flour
- 3/4 tsp salt
- 1/2 tsp freshly ground black pepper
- 4 skinless chicken thighs (about 12 ounces)
- 4 cups thinly sliced leek, rinsed and drained
- 4 cups low-sodium, fat-free chicken broth
- 1 1/2 cups baby carrots, cut diagonally into 1/2-inch pieces
- 1/2 cup chopped parsnip
- 1/2 cup chopped celery
- 1 tsp chopped fresh thyme
- 1 bay leaf
- 1/2 cup frozen petite peas, thawed
- Dumplings:
- 1 1/3 cups all-purpose flour
- 2 tsp baking powder
- 1/4 tsp salt
- 3/4 cup plus 1 tablespoon whole milk
- 2 Tbs chopped fresh chives
