Attention Shrimp Lovers!! Try this quick way to make fabulous shrimp
- 1 stick Butter, melted
- 1 Lemon, sliced thinly
- 1 pound fresh or defrosted, peeled and deveined shrimp (this is an estimate)
- 1 packet Good Season's Italian Dressing mix
Oven Fried Coconut Chicken

Combine first 3 ingredients in a large zip-top plastic bag
- 1 tablespoon fresh lime juice
- 1 tablespoon hot pepper sauce
- 1 (14-ounce) can light coconut milk
- 4 (4-ounce) chicken thighs, skinned
- 4 (4-ounce) chicken drumsticks, skinned
- 3/4 cup panko (Japanese breadcrumbs)
- 1/2 cup flaked sweetened coconut
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Cooking spray
Curried Chicken Breasts

1. Season Chicken Breasts with Ginger and Curry Powder
- 6 boneless chicken breasts
- powdered ginger
- curry powder
- 1 Tbs oil
- 1 Tbs butter
- 1/2 cup orange juice
- 1/2 cup white wine
- 1 Tbs chutney
- 1 tsp sugar (more to taste)
- 1 cup whipping cream
- 1/2 cup hazelnuts, toasted (optional, but wonderful!)

Preheat oven to 350°F or 325° F convection
- 1/2 1/2 1/2 cup (8 Tbs.) butter or non-dairy alternative (I used Earth Balance® Buttery Sticks)

- Nonstick cooking spray, for the muffin tin
- 1 cup creamy peanut butter
- 2 /3 cup granulated sugar

- Coconut oil for greasing pan. Use whatever you have
- 1 T ground almond meal, plus more for coating ramekins/baking dish.
- 1 lb fresh, part skim milk ricotta
- 5 L egg yolks
- 1/4 C xylosweet
- pinch of sea salt
- 1 t grated lemon zest ( Putting in one, good, half lemon, squeeze gives it a nice lemon flavor)
