- 1/3 cup Dutch Processed Cocoa
- 1 1/2 tsp. Instant Espresso powder (optional)
- 1/2 cup + 2 Tbs. Boiling Water
- 2 oz. Unsweetened Chocolate, finely chopped
- 4 Tbs.(1/2 stick) unsalted butter, melted
- 1/2 cup + 2 Tbs. Vegetable Oil
- 2 large Eggs
- 2 large Egg Yolks
- 2 tsp Vanilla
- 2 1/2 cups Sugar
- 1 3/4 cup Unbleached All Purpose Flour
- 3/4 tsp. table salt
- 6 ounces Bittersweet chocolate, cut into 1/2 inch pieces
- 1 cup Toasted Walnut pieces (not in original recipe)

Queso Blanco Dip

In a slow cooker combine the cream cheese, american cheese, butter, green chiles and jalepenos
- 8 oz block regular cream cheese, cut into 1/2 inch cubes
- 1 lb white american cheese, cut into 1/2 inch cubes (found in deli)
- 1 Tablespoon salted butter
- 1 (4oz can) Old El Paso Green Chiles
- 2 Tablespoons cilantro, chopped fine (optional)
- 1 Tablespoon Old El Paso jalepenos, minced fine (optional)
- 3-4 Tablespoons milk
- 2-3 Tablespoons water
Blueberry Flax Seed Muffins

Preheat oven to 375°F. Spray muffin pans with nonstick spray or line with paper liners
- 1 T flax seeds
- 1 c blueberries
- 1 c quick oats
- 1 c low-fat buttermilk or 1 cup skim milk + 1T lemon juice
- 1 c whole wheat flour
- 1 t baking powder
- 1/2 t baking soda
- 1/4 t cinnamon
- 1 t salt
- 1 whole egg
- 1/4 c unsweetened applesauce
- 3/4 c brown sugar
