Impossible Coconut Pie GF

Wonderful hot out of the oven, cold, or even room temperature, I recommend doubling the recipe, because one pie is
- 1 1/2-2 cups flaked coconut (sweetened or unsweetened, to your taste)
- 2 cups milk (dairy or nondairy – coconut milk is the obvious, but not required, choice)
- 4 large eggs
- 1 1/2 cups granulated cane sugar
- 1/2 cup gfJules™ All Purpose Flour
- 1 teaspoon pure vanilla extract
- 8 tablespoons butter or nondairy alternative, melted (I use Earth Balance® Buttery Sticks)

- 1/2 cup water, warm water
- 1 package dry yeast
- 2 cup milk, warm
- 1/2 cup butter
- 1 tsp salt
- 1 tsp sugar
- 2 cup flour
- 2 egg
- 1/4 tsp baking soda

Baked Broccoli Tots, GF

Who doesn't love tots? Instead of frozen tots, give this fresh, healthier option a try
- 2 cups or 12 ounces uncooked or frozen broccoli
- 1 large egg
- 1/4 cup diced yellow onion
- 1/3 cup cheddar cheese
- 1/3 cup GF panko breadcrumbs
- 1/3 cup GF Italian breadcrumbs
- 2 tablespoons parsley (or cilantro or rosemary)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Strawberry Delight Poke Cake

"This strawberry cake is really sweet but oh-so-good! Make it at least 2 days in advance
- 1 (16.5 ounce) package strawberry cake mix
- 1 cup water
- 3 large eggs
- 1/3 cup vegetable oil
- 1 (14 ounce) can sweetened condensed milk
- 1 (16 ounce) package frozen sweetened strawberries, thawed but not drained
- 1 (12 ounce) container frozen whipped topping (such as Cool Whip®), thawed
One-Pot Pasta

Serve with lots of fresh parmesan and fresh cut basil
- 12 oz. spaghetti
- 12 oz. cherry or grape tomatoes – halved
- 1 yellow onion – thinly sliced
- 4 cloves garlic – thinly sliced
- 1/2 tsp red pepper flakes
- 3 basil leaves, plus more torn ones for garnish (you could use dried basil instead)
- 2 TBS olive oil
- Coarse salt and freshly ground pepper
- 4 1/2 cups water
- 2 tsp salt
- fresh cracked pepper
- Freshly grated Parmesan cheese, for serving
Russian Pancakes (Crepes)

Chocolate Quinoa GF Cake

This decadent quinoa gluten free chocolate cake super moist and fudgy, flourless, and not too rich
- For the Ganache:
- 2 eggs (100 g, weighed out of shell), at room temperature
- 6 tablespoons (84 g) neutral oil (like sunflower, grapeseed, canola or vegetable oil)
- 1 cup (165 g) cooked and cooled quinoa or whole grain teff, cooked in water according to package directions*
- 1 teaspoon pure vanilla extract
- 3/4 cup (150 g) granulated sugar
- 1/2 cup + 2 tablespoons (50 g) unsweetened natural cocoa powder
- 3/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 3/4 cup Heavy Whipping Cream
- 8 oz. Dark Chocolate, chopped
- heated till Chocolate melts. Pour into the sunken cake.
- To make 1 cup cooked quinoa or whole grain teff, you’ll need about 1/2 cup raw quinoa or teff.
