Beignets (French Doughnut squares)

Breakfast and Brunch - Nancy N Wilson
- 3/4 cup warm water
- 1/2 package quick-rising active dry yeast (1/8 oz)
- 1/4 cup sugar
- 1/2 tsp salt
- 1/2 cup evaporated milk
- 1 lg egg, lightly beaten
- 2 tbsp veg shortening
- 3 1/2 cups flour
- Veg oil for deep frying
- Powdered sugar for dusting beignets before serving
Swedish Meatballs

Mix the first nine ingredients together and roll into balls
- 2 lbs ground beef
- 1/2 lbs ground pork
- 1 egg
- 2 slices bread (crust off) soak in milk
- 1 med onion, cut fine (1/2 in mixture and 1/2 saute)
- 1 tsp salt
- 1 tsp white pepper
- 1/2 tsp all spice
- 1 tsp sugar
- 1/2 stick of butter
- olive oil
- tbsp flour
- 2 cups beef broth (or water)
Honeyed Blueberry Breakfast Blintzes

- THE BLINTZ:
- 4 lg eggs, lightly beaten
- 1 cup whole milk
- 1/3 cup matzo meal or dry bread crumbs
- 1/3 cup potato starch
- 1/4 tsp salt
- Oil for frying
- THE FILLING:
- 3/4 cup honey
- 3/4 cup water
- 1/4 cup lemon juice
- 1/4 cup potato starch
- 1 tsp lemon zest (grated lemon peel)
- 2 cups fresh blueberries (or frozen blueberries, thawed)
- 1 cup sour cream
Vanishing Oatmeal Raisin Cookies

1.) Heat oven to 350 degree F
- 1 cup (2 sticks) margarine or butter, softened
- 1 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 eggs
- 1 tsp vanilla
- 1 1/2 cup all-purpose flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp salt
- 3 cups Oat (Quaker Oats-quick or old fashioned, uncooked)
- 1 cup of raisins
- chocolate chips and chopped walnuts is optional
Spaghetti w/Pinot Grigio and Seafood

- 1/4 cup olive oil
- 3 shallots, chopped
- 3 cloves garlic, minced
- 3/4 cup chopped sun-dried tomatoes
- 1 1/2 cup Pinot Grigio (or other white wine)
- 1 lb shrimp, peeled and deveined
- 2 lbs clams, washed
- 1 tsp kosher salt
- 1 tsp freshly ground black pepper

- 6 pork chops, trimmed
Flat Belly - Walnut-Crusted Chicken Breasts w/Pomegranate Syrup

- 1 egg
- 1 tbsp water
- 1/2 cup walnuts, finely chopped
- 1/4 cup whole grain bread crumbs
- 1/4 tsp salt
- 4 boneless, skinless chicken breast halves (5 oz each)
- 2 cups pomegranate juice
- 1 tbsp honey
- 2 tsp minced crystallized ginger
- 6 cups mesclun or mixed green
Grilled Pineapple-glazed pork

- 1 tablespoon vegetable oil, plus more for grates
- 1 cup long-grain white rice
- 1/3 cup honey
- 1 can (8 ounces) pineapple chunks in juice, drained and coarsely chopped (juice reserved)
- Coarse salt and ground pepper
- 1 pork tenderloin (1 pound), cut into 1 1/2-inch cubes
- 2 medium red bell peppers, cut into 1 1/2-inch pieces
- 2 scallions, thinly sliced
- 1 teaspoon grated fresh ginger (from a peeled 1/2-inch piece)
- 1 lime, cut into wedges, for serving

1.) Combine broth, vinegar, celery, onion, bell pepper, garlic, cumin, salt, and pepper in a 6-qt slow cooker
- 1 1/2 cups reduced-sodium chicken broth
- 1/4 cup sherry vinegar
- 2 stalks celery, thinly sliced
- 1 lg onion, chopped
- 1 lg red bell pepper, seeded and chopped
- 3 cloves garlic, minced
- 1 tbsp ground cumin
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 3 lbs flank steak, trimmed of fat, each steak cut into thirds
- 1/2 cup packed fresh cilantro leaves, chopped
- 1/2 cup chopped pickled jalapenos
- 10 corn tortillas, heated
So-Addicted Chicken Enchiladas

Preheat the oven to 400 degree F In a med nonstick skillet, heat the oil over low heat
- 1 tsp canola oil or olive oil
- 1 c chopped onion
- 2 lg garlic cloves, minced
- 1/2 c canned tomato sauce
- 1/3 c reduced-sodium chicken broth
- 9 oz cooked, shredded chicken breast
- 1/4 c plus 1 tbsp chopped fresh cilantro
- 1 tsp Mexican-style chili powder
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 3/4 kosher salt
- Cooking spray or oil mister
- 8 (7 or 8 inch) low-carb whole wheat flour tortillas
- 1 1/2 c Enchilada sauce
- 1 c shredded reduced fat Mexican cheese blend
- 2 tbsp chopped scallions, for garnish
- 4 tbsp light sour cream, for serving (optional)
