This meatloaf recipe is a combination of beef, veal and pork

  • MEATLOAF:
  • 1 tablespoon olive oil
  • 1 1/2 cup onion, chopped
  • 3 garlic cloves, minced
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoon dijon mustard
  • 1 teaspoon hot sauce
  • 1 1/2 teaspoon fresh marjoram, or 1/2 teaspoon dried, crumbled
  • 1 1/2 teaspoon fresh thyme, or 1/2 teaspoon dried, crumbled
  • Salt and freshly ground pepper, to taste
  • 1 pound chuck ground beef
  • 1/2 pound veal (optional). Use half pork and beef if you can't find ground veal or don't buy veal.
  • 1/2 pound ground pork
  • 1 1/2 cups fresh bread crumbs
  • 1/4 cup fresh parsley, minced
  • GLAZE:
  • 1/2 cup ketchup*
  • 1/4 cup light brown sugar
  • 1 1/2 tablespoon cider vinegar
  • NOTE: *I have used Heintz Chili Sauce in place of ketchup and that's also a great choice!

  • 2 1/4 teaspoon fast acting yeast (or package), I used Fleischmann's Bread Machine Yeast
  • 1/4 cup warm water (105°F to 110°F)
  • 2 teaspoons sugar
  • 1 cup milk, just to scalding hot (do not simmer or boil)
  • 1/3 cup sugar
  • 1/4 cup butter
  • 1 teaspoon salt
  • 1 egg, lightly beaten
  • 3 1/2 cups bread flour (dough will be somewhat sticky, but the less you use, the lighter the rolls)
  • 1 cups whole wheat flour
  • 3 tablespoons vital wheat gluten (optional)
  • 2 tablespoons butter, melted, for brushing
