The Very Best Glazed Meatloaf

This meatloaf recipe is a combination of beef, veal and pork
- MEATLOAF:
- 1 tablespoon olive oil
- 1 1/2 cup onion, chopped
- 3 garlic cloves, minced
- 2 large eggs
- 1/2 cup milk
- 2 teaspoon dijon mustard
- 1 teaspoon hot sauce
- 1 1/2 teaspoon fresh marjoram, or 1/2 teaspoon dried, crumbled
- 1 1/2 teaspoon fresh thyme, or 1/2 teaspoon dried, crumbled
- Salt and freshly ground pepper, to taste
- 1 pound chuck ground beef
- 1/2 pound veal (optional). Use half pork and beef if you can't find ground veal or don't buy veal.
- 1/2 pound ground pork
- 1 1/2 cups fresh bread crumbs
- 1/4 cup fresh parsley, minced
- GLAZE:
- 1/2 cup ketchup*
- 1/4 cup light brown sugar
- 1 1/2 tablespoon cider vinegar
- NOTE: *I have used Heintz Chili Sauce in place of ketchup and that's also a great choice!

- 2 1/4 teaspoon fast acting yeast (or package), I used Fleischmann's Bread Machine Yeast
- 1/4 cup warm water (105°F to 110°F)
- 2 teaspoons sugar
- 1 cup milk, just to scalding hot (do not simmer or boil)
- 1/3 cup sugar
- 1/4 cup butter
- 1 teaspoon salt
- 1 egg, lightly beaten
- 3 1/2 cups bread flour (dough will be somewhat sticky, but the less you use, the lighter the rolls)
- 1 cups whole wheat flour
- 3 tablespoons vital wheat gluten (optional)
- 2 tablespoons butter, melted, for brushing
Butternut Squash Stuffed Shells

Depending on how much you make and how much filling you use for each shell this will determine your ricotta amount
- Sauce:
- Ricotta
- Parmesan Cheese
- fresh smashed garlic
- frozen chopped spinach (squeezed and drained)
- 1 eg
- salt
- pepper
- roasted butternut squash, cooled
- grated lemon peel
- butter
- sage leaves
- fresh lemon juice
Applesauce Spice Muffins with Walnut Steusel

Mix all topping ingredients together by rubbing with fingers, set aside
- Topping:
- 1/2 cup packed brown sugar
- 4 tablespoons butter
- 1 teaspoon cinnamon
- 6 Tablespoons flour
- 1/2 cup finely chopped walnuts
- Cake:
- 2 cup flour
- 2/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- dash salt
- 2 eggs, beaten well
- Topping:
- 1/2 cup packed brown sugar
- 4 tablespoons butter
- 1 teaspoon cinnamon
- 6 Tablespoons flour
- 1/2 cup old fashioned oatmeal
- Cake:
- 2 cup flour
- 2/3 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- dash salt
- 2 eggs, beaten well
- 1 cup applesauce
- 1/2 cup canola oil
- 1 teaspoon vanilla
- 2 tsp pumpkin spice
- 1 cup raisins (optional)
Southwestern Bean Salad

My husband made this salad for a potluck BBQ
- For the wheat berries:
- 2 cups wheat berries (or brown rice)
- 2 1/2 cups water
- 1/2 cup chicken stock (orvegetable or beef)
- 1 can black beans (or pinto, or kidney beans)
- 2 cups cooked corn kernels (fresh or frozen)
- 1 small red pepper
- 1 small onion, diced
- 1/2 cup vinegar (we use white)
- 1/4 cup cilantro leaves, chopped (or flat leaf parsely)
- 1 minced jalapeno pepper (or cayenne pepper, to taste)
- 1 teaspoon chili powder
Blackberry Cobbler

I've made several, really good, versions of cobbler
- 1/2 stick butter, melted, plus more for greasing pan
- 1 1/4 cups plus 2 tablespoons sugar
- 1 cup flour (minus 2 tsp*)
- 1 1/2 tsp. baking powder*
- 1 cup whole milk
- 2 cups fresh (or frozen) blackberries (or your favorite berry combination)
- Whipped cream and/or ice cream, for serving
- NOTE: 1 cup self-rising flour can be used instead of the regular flour and baking powder

- 2 large baking sheets or one deep roasting pan, lined with parchment paper or with a silpat mat

- 15 cups popped corn (1/2 cup kernels, unpopped)
