- 1 (14-ounce) package Pepperidge Farm® Herb Seasoned Stuffing (or use your own stale bread combo of your choice)
- 3 stalks celery, chopped
- 1 whole onion, chopped
- 1/2 stick unsalted butter
- 2 cups of chicken broth (I used homemade turkey stock), heated until almost boiling
- 2 eggs, beaten
- 1 cup fresh parsley, chopped
- Bell's Seasoning (if a seasoning packet isn't included)
- Additions: stuffing recipes vary so much! You can add cooked sausage, chopped apples, dried cranberries, golden raisins, oysters...whatever your heart desires.
Onion Rings

For the hot pepper ketchup, melt jelly in a small saucepan over low heat
- FOR THE HOT PEPPER KETCHUP, MELT:
- 1 ⁄2 cup red pepper jelly
- 1 ⁄4 cp ketchup
- 2 Tbsp. apple cider vinegar
- Salt to taste
- FOR THE ONION RINGS, DIP:
- 1 large yellow onion, sliced into 1-inch-thick rings
- 2 cups buttermilk
- 2 cups all-purpose flour
- 2 tsp. kosher salt
- 1 tsp. baking powder
- 1 tsp. black pepper
- 1 tsp. paprika
- 1 ⁄2 tsp. cayenne
- Vegetable oil
- Salt to taste

- 1 cup whole milk
- 1 cup mayonnaise
- 1 1/2 teaspoons brown sugar

- 1/2 grated parmesan cheese
- 1/2 cup real mayonnaise
- 4 green onions, white and light green parts minced
- Dash of salt
- 4 cloves garlic, finely minced.
Berry Pie with a French Pastry Pie Crust

Berry Pie can be made year-round, with frozen berries
- For the crust:
- 3 cups all-purpose flour (recommended: King Arthur Flour)
- 1-1/2 tsp. salt
- 3 Tablespoons white sugar
- 1 cup shortening (I used butter flavor Crisco)
- 1 egg
- 1 teaspoon distilled white vinegar (you can't taste the vinegar in the crust)
- 5 Tablespoons cold water
- Optional:
- 1 egg whisked with 1 Tablespoon water.
- For the fruit filling:
- 1 pint raspberries (fresh or frozen)
- 1 pint blueberries (fresh or frozen
- 1 pint blackberries (I used olallieberries)
- zest of one small lemon
- juice of one small lemon
- 3/4 cup sugar (reduce or increase, depending on the tartness of your berries)
- 5 Tablespoons ClearJel (purchased online with King Arthur Flour) or 3 Tablespoons cornstach
- pinch of salt
- 2 tablespoons unsalted butter
Broccoli and Tomato Stew

- Kosher salt
- 1 head broccoli, head cut into bite size florets, stems peeled and cut into 1/4-inch thick "coins"
- 2 teaspoons coriander seeds
- Extra-virgin olive oil
- 1 medium onion, cut into 1/4-inch dice
- Pinch crushed red pepper
- 1 clove garlic, smashed and finely chopped
- 1/2-inch piece ginger, peeled and grated on a zester

Asparagus, Leek and Gruyere Quiche

I got the idea of making this quiche from Martha Stewart’s Every Day Food TV show, but I used my own favorite pie...
- My favorite pie crust*, fitted into a 9-inch pie plate, well chilled:
- 1 tablespoon butter
- 1 leek (white and light green parts only), halved and thinly sliced, then well washed
- Coarse salt and ground pepper
- 1 bunch (1 pound) asparagus, tough ends removed, thinly sliced on the diagonal
- 4 large eggs
- 1 1/4 cups half-and-half
- Ground nutmeg
- 1 cup shredded Gruyere cheese (4 ounces)
- 3 cups all-purpose flour (I used organic whole wheat pastry flour)
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 1/2 sticks (12 tablespoons) unsalted butter (chilled)
- 3 large eggs
- 3 to 4 tablespoons ice water, or as much as needed
- This makes two pie crusts. I freeze one for later use.
Hermit Cookies, Cook's Illustrated

- 2 cups unbleached all-purpose flour (about 10 ounces)
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground black pepper
- 1/2 teaspoon table salt
- 8 tablespoons unsalted butter (1 stick), melted and cooled
- 1/2 cup packed light brown sugar (3 1/2 ounces)
- 2 large eggs , 1 whole and 1 separated, white lightly beaten
- 1/2 cup molasses (light or dark), about 6 ounces
- 1 1/2 cups raisins
- 2 tablespoons confectioners' sugar (optional)
