- 15 Medjool pitted dates
- 1 pound aged Manchego, cut into 15 blocks
- 5 slices bacon, cut into thirds
- 1/2 cup maple syrup

1. Melt the butter in a pan
- 2 tablespoons butter
- 1 onion (chopped)
- 1 red pepper (chopped)
- 1 poblano pepper (chopped)
- 2 cloves garlic (chopped)

- 1 tablespoon chili powder
- 1 teaspoon cumin (toasted and ground)
- 2 tablespoons flour
- 1 cup of chicken broth
- 1 (14 ounce) can diced tomatoes, drained
- 1 (4 ounce) can chopped green chilies, drained
- 1/2 cup milk
- 1 teaspoon oregano
- 1 cup corn
- 1/2 cup sour cream
- 1/4 cup cilantro (chopped)
- salt and pepper to taste
- 10 corn tortillas
- 2 cups cheese (grated)
Easy Bread & Butter Pickles

I've never pickled a thing before I made these sweet & sour pickles
- 1 pound cucumbers, sliced 1/4-inch thick — “pickling” or kirby cucumbers work best here
- 1 large sweet onion, thinly sliced
- 1/4 cup Diamond Kosher salt
- 1/2 to 3/4 cups sugar
- 1/2 cup distilled white vinegar
- 1/4 teaspoons ground turmeric
- 1 tablespoon mustard seeds
- 1 tablespoon coriander seeds (if ground, use 1 teaspoon)
- 1/4 teaspoon celery seed
Transylvanian Goulash

- 1 pound (drained weight) sauerkraut
- 2 tablespoons butter
- 1 cup onion, finely chopped
- 1 large garlic clove, miced
- Salt
- 2 tablespoons sweet Hungarian paprika
- 3 cups chicken broth
- 4 pounds boneless pork shoulder, cut in 2-inch cubes
- 1 1/2 teaspoons caraway seeds
- 1/4 cup tomato puree or plain tomato sauce
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 2 tablespoons flour
Peppermint Cream Pie

What I most look forward to, during the Christmas Holidays, is peppermint
- For the crust:
- 1 9-oz package chocolate wafer cookies,
- 1/8 cup granulated sugar
- 1 stick butter, melted
- For the filling:
- 1 envelope plain gelatin
- 1/4 cup cold water
- 1/2 teaspoon peppermint extract
- 2 cups heavy whipping cream, divided
- 1 cup crushed soft peppermint candy*, plus extra for garnish
- Garnish:
- 1 cup heavy whipping cream
- 1/3 cup sifted powdered sugar
- 1/2 teaspoon vanilla or peppermint extract
- Crushed peppermint
- You can use Red Bird Brand (the original soft peppermint) or Bob’s peppermints are a popular choice
Gingerbread Biscotti

Preheat oven to 350 degrees F and place the oven rack in the center of the oven
- 3/4 cup (100 grams) hazelnuts, toasted and coarsely chopped (can also use pecans or walnuts)
- 1 cup (100 grams) old fashioned rolled oats
- 1 3/4 cups (225 grams) all purpose flour
- 3/4 cup (160 grams) dark brown sugar
- 1/2 teaspoon kosher salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 2 large eggs
- 1/4 cup (60 ml) unsulphured molasses (such as Grandma’s Molasses)
- 2 tablespoons light olive oil (or corn oil)
- 1/2 teaspoon pure vanilla extract
- 3/4 cup (95 grams) dark or golden raisins
- GLAZE (optional)
- 1/2 cup (55 grams) confectioners sugar (icing or powdered sugar), sifted
- 1/4 teaspoon pure vanilla extract
- 2 – 3 tablespoons milk or light cream
