Feta Stuffed Fig Glazed Lamb Burgers with Red Onion Jam

This recipe was inspired by Southern Living Magazine's version of Fig Glazed Beef Burgers with Red Onion Jam
- RED ONION JAM:
- Vegetable cooking spray
- 1 pound ground lamb
- 1/2 pound ground veal*
- 2 tablespoons fresh oregano, chopped
- 2 teaspoon Montreal Steak Seasoning (or season with kosher salt, fresh cracked pepper and garlic powder, to taste)
- 2 teaspoon fresh oregano, or 1 teaspoon dried
- 3 to 4 tablespoons fresh parsley, optional
- 3 tablespoons fig preserves
- 2 to 3 thin slices feta cheese
- 4 quality hamburger buns, toasted
- Fresh spinach leaves, for garnish
- 4 cups thinly sliced red onions, about 2 medium
- 1 teaspoon olive oil
- 1/4 cup sugar
- 1/4 cup red wine vinegar
- 1 to 2 teaspoons chopped fresh thyme
- NOTE: Mixing veal, or pork, can tone down the flavor of lamb
Hawaiian Burger with Hawaiian-Style Slaw

Using a combination of ground beef and pork, these patties turn out juicy and tender
- COLESLAW:
- 8 hamburger buns
- 1 pound ground beef
- 1 pound ground pork
- 1/4 teaspoon allspice
- 1 tablespoon ground ginger
- Salt & pepper, about 1/2 teaspoon each or to taste
- 1 cup fresh cilantro, chopped
- 1/2 cup green onions, sliced
- 1 cup barbecue sauce (recommended: Target/Archer Farms Sweet Pineapple Hawaiian-Style sauce)
- 3 cups green cabbage, thinly sliced
- 1 cups purple cabbage, thinly sliced
- 1 cups carrots, shredded
- 1 clove garlic, finely minced
- 1 tablespoon poppy seeds
- 1/4 cup rice vinegar (or apple cider vinegar)
- 2 teaspoons honey mustard (or Dijon will work)
- 1/2 cup olive oil (add more, as needed)
- Salt & pepper, to taste
Cornmeal & Ricotta Waffles

- 3/4 cups ricotta cheese (12-ounces)
- 1 cups milk
- 3 large eggs, separated
- 1/4 cup sugar
- 1 cups cake flour
- 1/4 cup fine yellow cornmeal
- 1-1/2 teaspoons baking powder
- 1/8 teaspoon salt
- 1 teaspoon vanilla (optional)
- 1/2 stick (4-ounces) unsalted butter, melted, plus more for serving

- CAKE:
- 1/4 cup powdered sugar (to sprinkle on towel)

I'm an aspiring bread baker
- STARTER:
- 1/2 cup cool water
- 1/16 teaspoon active dry yeast or instant yeast (I used SAF Instant Yeast)
- 1 cup King Arthur Unbleached Bread Flour (I never use bleached flour)
- DOUGH:
- 1 teaspoon active dry yeast or instant yeast
- 1 cup to 1 1/4 cups lukewarm water*
- All of the starter
- 3 1/2 cups King Arthur Unbleached Bread Flour
- 1 1/2 to 2 teaspoons salt, to taste
- Use the lesser amount in summer (or in a humid environment), the greater amount in winter (or in a dry climate), and somewhere in between the rest of the year, or if your house is climate controlled.

- Lemon Poppy Seed Cake:
- 3 cups cake flour

Cajun Chicken Pasta

This is a flavorful Cajun chicken pasta recipe that can be on the dinner table in less than 30 minutes
- CAJUN SPICE MIX:
- 3 whole chicken breasts, boneless, skinless, cut into cubes
- 3 teaspoons Cajun spice mix (If you don't have any on hand I've included a homemade blend below)
- 1 pound fettuccine
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 whole green bell pepper (I used yellow), seeded and sliced
- 1 whole red bell pepper, seeded and sliced
- 1/2 whole large red onion, sliced
- 3 cloves garlic, minced
- OPTIONAL: Fresh sliced mushrooms would be a great addition.
- 4 whole Roma tomatoes, diced
- 2 cups low sodium chicken broth
- 1/2 cups white wine
- 1 cup heavy cream
- Cayenne pepper, to taste
- Freshly ground black pepper, to taste
- Salt, to taste
- Fresh parsley, chopped, to taste
- 1 tablespoon sweet paprika
- 1 tablespoon Lawyry's Spice Mix
- 1 teaspoon cayenne pepper
- 1 tablespoon garlic powder
