I am on a mission to eat less starchy carbs and to lose some weight that has snuck up on me over the last year
- 1 Turkey Sausage Link (I used mild)
- 1 fresh egg
- 3 Tbsp. Liquid Egg Whites
- 2 Tbsp onion (1/4 fresh onion)
- 1 clove garlic (minced)
- 1/8 tsp red pepper flakes (omit if using Hot sausages)
- Fresh cracked pepper
- 1/8 cup low-fat milk (non-fat is even better, but I don't buy it)
- 1 Tbsp. Grated Parmesan Cheese
- I cup frozen spinach

- 4 boneless duck breasts
- Kosher salt and freshly ground black pepper
- 1 large or 2 small shallots, minced
- 1/4 cup ruby port wine
- 1/3 cup freshly squeezed orange juice, plus 1 teaspoon orange zest
- 1/2 cup pitted frozen black cherries*, thawed and roughly chopped
- NOTE: I used 1/2 cup sour cherry preserves
- 2 small pats of unsalted butter (optional)

- For the crust:
- 1 1/4 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 stick (8 tablespoons) butter, cubed and kept cold
- 3-4 tablespoons ice water
- For the custard:
- 1 1/2 cups milk, 2% or higher
- 1/3 cup sugar
- 3 tablespoons cornstarch
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon butter
- For the peaches:
- 4 cups sliced fresh peaches
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- 1 tablespoon butter
- 2 tablespoons cornstarch
- 3 tablespoons water
- For the whipped cream:
- 1 cup heavy whipping cream, cold
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla
- 1/2 teaspoon powdered gelatin
- 1 1/2 teaspoons cool water

- OPTIONAL:
- 1 cup milk
- 1/2 cup water
- 1/4 cup butter
- 4 1/2 cups all-purpose flour* (or bread flour)
- 1 (.25 ounce) package instant yeast (I used Fleischmann's Rapid Rise Yeast)
- 2 tablespoons white sugar
- 1 1/2 teaspoons salt
- 1 egg
- 1 egg, whisked
- 1 to 2 tablespoons poppy or sesame seeds

Sour Dough Pizza Dough - Sausage, Onion & Mushroom Pizza

I've recently conquered my fear of failure in making sour dough breads
- PIZZA TOPPING:
- 1 cup sourdough starter*, unfed (straight from the fridge)
- 1/2 cup hot tap water
- 2 1/2 cups King Arthur Unbleached All-Purpose Flour
- 1 teaspoon salt
- 1/2 teaspoon instant yeast
- 4 teaspoons Pizza Dough Flavor, optional but delicious
- You can find all kinds of ways to make your own starter. I bought one from King Arthur Flour for $8.95, that dates back 250 years!
- 4 Italian sausages, casings removed
- 1 onion, thinly sliced
- 1/2 pound cremini (or white button mushrooms) thinly sliced
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup sliced black olives, drained (optional)
- 4 cups mozzarella, shredded (I used a blend with provolone and Asiago and mozzarella)
- 1 to 2 cups pizza sauce (I used leftover marinara sauce)
Bavarian Style Apple Strudel (Apfel Strudel)

Apple strudel is synonymous with Germany, but there are many variations in other countries (such as Austria)
- 1 package frozen puff pastry (I used Pepperidge Farm brand), thawed overnight in the refrigerated, per package directions
- 3 apples (I used a combination of Granny Smith and Jonigolds-- golden delicious are a good choice, too)
- 3/4 cup golden raisins
- 1/2 cup sugar
- 1 tablespoon Clearjel* (a useful thickener purchased from www.Kingarthurflour.com)
- 1/4 cup boiled cider** (optional, purchased from www.Kingarthurflour.com)
- 1 tablespoon fresh lemon juice
- 2 to 3 teaspoons cinnamon
- 2 tablespoons butter, melted
- 3 to 6 tablespoons sour cream (approximately)
- 1 egg (beaten with a splash of water)
- Coarse sugar (optional)
Easy Tomatillo Salsa Verde (Green Salsa)

Tomatillos look like green tomatoes, but they are related to the gooseberry family
- 1 pound fresh tomatillos, husk removed and rinsed well
- 2 cloves garlic, peeled and left whole
- 1 jalapeno pepper, stemmed and halved
- 1/2 yellow onion, cut into thirds
- 1 tablespoon vegetable (or olive) oil
- Kosher salt and freshly ground black pepper
- 3/4 cup fresh cilantro
- Juice of 1 lime
- NOTE: I didn't add the cilantro into the salsa, and still loved the flavor.
Coffee Cake Muffins From Baking Illustrated

Preheat oven to 350 degrees F
- 1/2 cup pecans
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
- 2 cups all-purpose flour
- 1 cup sugar
- 1 tsp salt
- 1/2 cup (1 stick) unsalted butter, cut into 1/2" pieces and at room temperature
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3/4 cup sour cream (or plain yogurt would work too)
- 1 large egg
- 1 tsp vanilla extract
- 1 cup powdered sugar
- 2 tablespoons milk
