- 1/4 cup seedless raspberry jam, optional

Whole Salmon "Slashed and Stuffed" with Basil Butter

- Olive oil, for grill
- 2 bunches fresh basil leaves, divided
- 2 sticks unsalted butter, room temperature
- Kosher salt and freshly ground black pepper
- 1 (4 pound) whole salmon, cleaned and scaled
- 2 lemons, cut into wedges
- Extra-virgin olive oil
- Sea salt
Chicken Teriyaki

Combine the water, soy sauce, brown sugar and mirin in large ziploc bag and add the chicken thighs
- for brine
- 1/2 cup water
- 2 tablespoons Japanese soy sauce
- 2 tablespoons dark brown sugar
- 2 tablespoons mirin
- 4-6 skin-on filleted (boneless) chicken thighs
- for teriyaki sauce
- 2 tablespoons mild flavored honey (or maltose)
- 2 tablespoons dark soy sauce
- 2 tablespoons mirin
- 2 tablespoons sake
Blackberry Swirled White Chocolate Ice Cream recipe adapted from David Lebovitz

Put the chocolate pieces in a large bowl and set a mesh strainer over the top
- 8 oz white chocolate, finely chopped
- 1 cup whole milk
- 2/3 cup sugar
- pinch of salt
- 5 large egg yolks
- 2 cups heavy cream
- 1 cup fresh blackberries
- 2 tablespoons sugar
Juicy Pub-Style Burgers

I've never made my own ground beef, for burgers, because
- 2 pounds sirloin steak tips*, trimmed of excess fat and cut into 1/2-inch chunks
- 4 tablespoons unsalted butter, melted and cooled slightly
- Salt and pepper
- 1 teaspoon vegetable oil
- 4 hamburger buns, toasted and buttered (I prefer brioche burger buns)
- NOTE: *sirloin steak tips is also known as "flap meat". It doesn't sound pretty, but don't let that discourage you. It's delicious. I buy mine at Costco.
Sautéed Snow Peas with Ginger, Garlic, and Scallion

- 1 tablespoon vegetable oil
- 2 garlic cloves , minced
- 2 scallion whites , minced

- 1/8 teaspoon sugar
- 1 teaspoon rice vinegar
- 2 scallion greens , sliced
- 3/4 pound snow peas , tips pulled off and strings removed

- 1 tablespoon distilled white vinegar
- Caramel layer ingredients
- 1 1/2 sticks Salted* butter
- 1 1/4 cups light brown sugar
- 1/2 cup honey
- 1/2 teaspoon salt
- 1 cup heavy cream
- 1 pound pecan halves (toasted)
- *I like my caramel on the salty side. If you prefer a sweeter caramel, use unsalted butter.*
