Mai Tai Cocktail

This iconic Hawaiian cocktail became one of our favorite drinks while we visited Maui
- GARNISH:
- 1 1/2 ounces Bacardi light rum
- 3/4 ounce orange curacao
- 1/2 ounce orgeat syrup
- 3 ounces fresh orange juice
- 3 ounces fresh pineapple juice
- (or use a blend of pineapple, orange, guava juice, if you can find it)
- Splash Bacardi 151 rum (optional)
- Splash dark rum
- Ice
- Fresh pineapple wedge
Classic Tomato Soup (Cook's Country)

1. Drain tomatoes in colander set over large bowl, pressing lightly to release juices
- Use unseasoned canned tomatoes.
- 2 (28-ounce) cans diced tomatoes
- 3/4 cup low-sodium chicken broth
- 3 tablespoons unsalted butter
- 1 onion, chopped
- 1 bay leaf
- 1 teaspoon brown sugar
- 2 tablespoons tomato paste
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking soda
- Salt and pepper
- 1/2 cup heavy cream
Tortilla Soup

1 In dutch oven, heat the oil over medium heat
- GARNISH:
- 6 Tbs canola oil
- 6 corn tortilla, chopped
- 6 cloves garlic, minced
- 1/2 cup cilantro, chopped
- 1 medium onion, chopped
- 1 can diced tomatoes, (28-oz)
- 2 Tbs ground cumin
- 1 Tbs chili powder
- 3 bay leaves
- 6 cups chicken stock
- 1 tsp salt
- 1/2 tsp cayenne pepper
- 4 larged chicken breast halves, cooked and shredded
- monterey jack cheese, shredded
- avocados, diced
- sour cream, optional
- 2 corn tortillas, slice and fried crisp
Extra Creamy Strawberry Ice Cream

This is, by far, the best ice cream I have ever made
- 3 large egg yolks
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- Pinch salt
- 1 cup half and half (I used whole milk)
- 1 cup heavy cream
- 1 pint strawberries
- Amaretto liqueur, optional
Homemade Cherry Pie Filling = The Best Cherry Pie!

This is the first time I've made a cherry pie, with homemade cherry pie filling
- CRUST:
- 2 1/2 cups all-purpose flour (I used King Arthur unbleached AP flour)
- 1 teaspoon salt
- 1 teaspoon sugar
- 1 cup (2-sticks) unsalted butter chilled and cut into small pieces
- 1/4 to 1/2 cup ice water
- PIE FILLING:
- 5 to 6 cups sour cherries*, packed in water or individually quick frozen
- 3/4 cup sugar
- 3/4 teaspoon cinnamon (I reduced this to 1/4 teaspoon)
- 1/4 cup quick-cooking tapioca or 1/2 cup Pie Filling Enhancer** OR
- 7 1/2 teaspoons Clearjel***
- 1 teaspoon almond extract
- 1/2 teaspoon salt
- 2 tablespoons butter, optional (I always use this)
- INGREDIENT NOTES:
- I used 3 cans of Oregon Fruit Products Sour Cherries in water. For a deep-dish pan, use 4 cans.
- Pie Filling enhancer can be purchased through King Arthur Flour.com
- I use Clearjel for all of my fruit pies, which I order from King Arthur.com.
Orange Sweet Rolls with Orange Cream Cheese Frosting

Who doesn't love fresh baked cinnamon rolls, warm from the oven, with gooey cream cheese frosting? I became obsesse...
- ORANGE FILLING:
- 3/4 cup buttermilk, warm
- 6 tablespoons butter, melted and cooled
- 3 large eggs
- 4 1/4 cups (21 1/4-ounces) flour (King Arthur Bread flour recommended)
- 1/4 cup (1 3/4-ounces) sugar
- 1 1/4 teaspoons salt
- 1 teaspoon Lorann Buttery Sweet Dough Emulsion (optional, ordered online)
- 1/2 cup softened butter
- 1 cup sugar
- 2 tablespoons freshly squeezed orange juice
- Grated orange rind/zest from two large oranges (reserving 1/2 teaspoon grated rind for the glaze below)
- 1/4 teaspoon pure orange oil (optional)
- ORANGE CREAM CHEESE FROSTING:
- 4 tablespoons cream cheese, softened
- 4 tablespoons butter, softened
- 2 cups confectioner's sugar
- 2 tablespoons freshly squeezed orange juice
- Reserved orange zest
- 1/4 teaspoon pure orange oil (optional)
- 1/2 teaspoon grated orange rind/zest reserved from the filling above
Cake Batter Chocolate Bark

Melt dark chocolate either in the microwave or a double boiler
- 6 ounces high quality dark chocolate (I used Lindt 70%)
- 12 ounces high quality white chocolate (I used Lindt)
- 3 teaspoons yellow cake mix*
- sprinkles of your choice (at least 3 tablespoons worth or more)
- suggestion to add more cake mix
Bolillos - Mexican Oval Rolls

A bolillo is a type of savory bread traditionally made in Mexico, where it originates, and Central America
- 1 package (1/4 ounce or 7 g) active dry yeast
- 1 1/3 cups ) warm water (105 to 115°F
- 1 tablespoon honey
- 1 tablespoon ) lard or vegetable shortening,melted and cooled
- 1 1/2 teaspoons salt
- 3 1/4 to 4 cups bread flour*
- 3 Tbsp. Easy Roll Dough Improver (buy online with King Artur Flour--optional)
- 1/4 cup cold water
- 1 teaspoon cornstarch

- 3/4 cup (5 1/4 ounces) Baker's Special sugar or granulated sugar
- 1/2 cup (1 3/4 ounces) sliced, blanched almonds
- 1/2 teaspoon ground cinnamon, optional
