The Best Vegetarian Chili

I absolutely adore Chili con Carne, and I make a great batch of it-- if I do say so, myself
- Salt
- 1 pound (2 1/2-cups) dried beans, picked over and rinsed (I used pinto beans)
- 2 dried ancho chiles
- 2 dried New Mexican chiles
- 1/2 ounce dried shiitake mushrooms, chopped coarse
- 4 teaspoons dried oregano
- 1/2 cup walnuts, toasted
- 1 (28-ounce) can diced tomatoes, drained with juice reserved
- 3 tablespoons tomato paste
- 1 to 2 jalapeño chiles, stemmed and coarsely chopped (I used 1)
- 6 garlic cloves, minced
- 3 tablespoons soy sauce
- 1/4 cup vegetable oil
- 2 pounds onions, chopped fine
- 1 tablespoon ground cumin
- 7 cups water
- 2/3 cup medium-grind bulgur
- 1/4 cup fresh cilantro, chopped

- 6 cups old-fashioned oats (you can use Quick Oats, but old-fashioned is best)

Greek Zucchini Fritters Kolokithokeftedes

These Greek Zucchini Fritters are a savory side dish, or appetizer that uses zucchini in a different way
- Tzatziki :
- 2 medium to large zucchini, coarsely grated
- 1/2 cup feta cheese, crumbled
- 4 green onions including green parts, chopped
- 3 tablespoons fresh mint, finely chopped (optional, I didn't use)
- 2 tablespoons fresh dill, finely chopped
- 1 large egg
- 1/2 cup flour
- 4 tablespoons Panko bread crumbs
- Salt
- Olive oil
- 1 cup Greek yogurt*
- 1 small clove garlic, grated
- 1/4 cucumber, peeled and grated
- 1/2 teaspoon cumin
- 1 lemon, juiced
