Fruit Dip

This dip is especially good with strawberries, but I have also served it with melon balls (cantaloupe and honeydew)...
- 1 package (8 ounces) cream cheese, softened
- 1 jar (7-1/2 ounces) marshmallow cream
- Your favorite flavor liqueur to taste (about 1 tablespoon)
Apple Blueberry Cobbler

Butter a 9x13 baking dish
- Topping:
- 4 large Granny Smith apples, peeled, cored and thinly sliced, 4 cups
- 4 cups blueberries
- 1 cup sugar
- 1 tsp cinnamon
- Dash nutmeg
- 1 stick butter
- 1/2 cup brown sugar
- 1 cup flour
Cranberry-Oatmeal Bars

Maple-Date-Oatmeal Bars: Substitute chopped pitted dates for the dried cranberries
- Crust:
- 4.5 ounces all-purpose flour (about 1 cup)
- 1 cup quick-cooking oats $
- 1/2 cup packed brown sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 6 tablespoons butter, melted
- 3 tablespoons orange juice $
- Cooking spray
- Filling:
- 1 1/3 cups dried cranberries (about 6 ounces) $
- 3/4 cup sour cream $
- 1/2 cup granulated sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla extract $
- 1/2 teaspoon grated orange rind $
- 1 large egg white, lightly beaten $
Mexican Rice

Preheat oven to 350 degrees
- 1/3 cup canola oil
- 2 cups long grain white rice
- 3/4 cup minced onion
- 3 medium jalapenos stemmed, cleaned of seeds and minced
- 4 garlic clove minced
- 1/2 lime juiced and divided
- 2 cups chicken stock
- 1/2 cup fresh cilantro minced and divided
- 1 1/2 teaspoons salt
- 1/4 teaspoon chili powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon Rocket Fuel, or your favorite hot sauce
- 3 tablespoons minced scallion
Layered Seafood Dip

In a medium bowl, blend cream cheese, sour cream and mayonnaise
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 cup cocktail sauce
- 1/2 cup chopped green bell pepper
- 3 green onions, chopped
- 1 tomato, seeded and chopped
- 1 cup cooked crabmeat
- 1 cup cooked baby shrimp
- 1 cup finely shredded mozzarella cheese
FAJITA NACHOS

In a large Ziploc, mix lime juice, oil, beer, garlic, coriander, cumin and jalapeno
- 1/4 c each lime juice and olive oil
- 1/2 c beer
- 2 cloves (or more) garlic, minced or pressed
- 1 t each of ground coriander and ground cumin
- 1 fresh jalapeno, minced (leave in seeds and ribs if desired for extra heat)
- seasoned beans (recipe follows)
- 1 1/2 # beef skirt or flank steak
- 2 medium onions chopped
- 1 1/2 c grated or shredded cheddar cheese
- guacamole
- lime salsa (recipe follows)
- Flour tortilla chips
- SEASONED BEANS
- In a 2-3 quart heavy saucepan over medium heat, combine 3 T of the reserved
- marinade, 2 cans (15 oz. each) pinto or black beans (or a combination of
- both) and 1 c beer. Stir often. Coarsely mash beans until mixture thickens
- slightly. Cook for 15-20 minutes; add kosher salt to taste. Use hot.
- LIME SALSA
- Mix 1 large (@ 1/2#) ripe tomato, cored and finely diced; 2 large tomatillos
- (@ 1/2# total) chopped; 1/4 c minced red bell pepper; 2 T minced red onion;
- 1 T grated lime zest; and 1 T lime juice.
