JoJo’s Party Cheese Ball

*This is better to make a day ahead
- 2 - 8 ounce packages of Cream Cheese
- 1 1/2 cups of finely-shredded Sharp Cheddar Cheese
- 1 - package of Lipton Onion Soup Mix
- 1/2 cup of Ranch Dressing
- 1/2 cup of broken Bacon Pieces (real bacon)
- 1/4 cup of red Crystal Hot Sauce
- 2 - packets of Splenda Sweetner
- 1 - cup of finely-chopped Pecan Pieces
Sweet Potato Biscuits

Preheat the oven to 450 degrees
- 2 heaping tablespoons of sugar
- 1 1/4 cups all-purpose flour
- 4 teaspoons baking powder
- 1/4 cup (1/2 stick) of butter
- 2-4 tablespoons milk (depending on the moisture of the potatoes)
- 3/4 cup mashed cooked sweet potatoes
- 1/2 teaspoon salt
Basic Turkey Gravy

Breakfast Enchiladas

- 20 eggs, beaten
- 1/4 c milk or cream
- 2-4 Tbsp butter, enough to scramble eggs in.
- 1 lb ground sausage, spicy
- salt, to taste
- 20 flour tortillas
- 2 c monterey jack cheese

- 1/2 c flour
- 1/2 c butter
- 4 c milk
- 3 c cheddar cheese, grated
- CHEESE SAUCE
- 1/2 c flour
- 1/2 c butter
- 4 c milk
- 3 c cheddar cheese, grated
- 1 c green chili salsa
- 1 1/2 tsp garlic powder
- 1/2 tsp cayenne pepper

One-Pot Paella

Coat a soup pot with nonstick cooking spray
- 1/2 pound turkey sausage, cut into 1/2-inch slices
- 1 onion, chopped
- 1 red bell pepper, cut into thin strips
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 1/2 cups uncooked long-grain rice
- 3/4 cup water
- 1 (14-1/2-ounce) can diced tomatoes, undrained
- 2 (8-ounce) bottles clam juice
- 1/2 teaspoon ground turmeric
- 1/2 pound medium shrimp, peeled and deveined
Pizza Casserole

Everyone loves pizza, but sometimes you want to change things up a bit
- 1 bag of egg noodles
- 1 extra large can of Ragu sauce
- 3 cups shredded mozzarella cheese
- 1 1/2 pounds hamburger meat
- 1 package pepperonis
Slow Cooker Green Chile-Chicken Enchilada Casserole

Cover; cook on Low heat setting 6 to 7 hours
- 1 Spray 3- to 4-quart slow cooker with cooking spray. In cooker, spread 1 can of the green chiles. In medium bowl, mix remaining can of green chiles, the soup, enchilada sauce and mayonnaise.
- 2 Arrange 1/3 of the tortilla strips over chiles in cooker.
- Top with 1 cup of the chicken, 1/2 cup of the beans,
- 1/2 cup of the cheese
- 1 cup of the enchilada sauce mixture, spreading to edges of cooker to completely cover tortilla strips. Repeat layers twice, reserving last 1/2 cup of cheese.
- 3 Cover; cook on Low heat setting 6 to 7 hours.
- 4 Top with remaining 1/2 cup cheese. Cover; cook about 5 minutes longer or until cheese is melted. Serve with tomatoes, lettuce and sour cream.
Peanut Butter and Jelly Thumbprints

Lightly spoon flour into dry measuring cups; level with a knife
- 2 cups all-purpose flour (about 9 ounces)
- 1/4 teaspoon salt
- 3/4 cup packed brown sugar
- 2/3 cup granulated sugar
- 1/2 cup chunky peanut butter
- 1/4 cup butter, softened
- 2 large eggs $
- 1 teaspoon vanilla extract
- Cooking spray
- 7 tablespoons seedless raspberry preserves
- 1 tablespoon fresh lemon juice
Fish Piccata

Heat the olive oil in a large saute pan over medium-high heat
- 2 tablespoons olive oil
- 4 small white fish fillets, about 1 pound total
- Kosher salt and freshly ground black pepper
- 1/4 cup flour
- 1/4 cup white wine
- 2 lemons, juiced
- 2 tablespoons capers
- 2 tablespoons butter
- 2 tablespoons chopped fresh parsley

Heat oil in 12-inch nonstick skillet over medium heat and cook 3 tortillas, turning once, 1 minute or until golden
- 1/2 c corn oil
- 12 corn tortillas, cut into 8 wedges
- 1 jar (lb. 8 oz.) Ragu® Old World Style® Pasta Sauce
- 2 T chipotle peppers in adobo sauce
- Your favorite chilaquiles toppings (chopped red onoins, crmbled queso fresco and/or chopped fresh cilantro)
