Cheese Cake

From Ruth Lense via Mrs. Mae Breseman You could use graham cracker crust
- Filling:
- 1 pkg Holland Rusk
- 1/2 c. butter, scant
- 1 tsp. cinnamon
- 3/4 c. sugar
- 2 lbs. cottage cheese, without cream
- 3 eggs
- 1 c. sugar
- pinch of salt
- 1 tsp. vanilla
- 2 Tbsp. flour
- 1/4 pt. cream (1/2 c.)
Tuna & Mushroom Casserole

Can use one big bag of potato chips
- 4 Tbsp. butter
- 1/4 tsp. pepper
- 3- 1/2 . oz. pkgs. potato chips
- 2- 7 oz. cans tuna, flaked
- 4 Tbsp. flour
- 2 1/4 c. milk
- 3/4 c. sliced and sauteed mushrooms
Whole Wheat Zucchini Pizza

A real treat and pretty easy to make
- Tomato Sauce:
- 1 pkg. yeast
- 1 1/2 c. warm water
- 2 Tbsp. salad oil
- 1 tsp. each salt, sugar, basil, and oregano leaves
- 1/4 c. wheat germ
- 1 1/2 c. each all-purpose flour and whole wheat flour
- 2 med. zucchini, thinkly sliced
- 1/2 green or red bell pepper, seeded and thinly sliced
- 4 green onions, including tops, thinly sliced
- 1 can (2 1/4 oz.) sliced ripe olives
- 1 can (14 oz.) artichoke hearts, drained and quartered
- 3 c. shredded jack cheese
- 1/4 c. grated Parmesan cheese
- 1 lrg. onion, chopped
- 2 Tbsp. olive or salad oil
- 1 can (15 oz.) tomato sauce
- 1 can (6 oz.) tomato paste
- 1/2 c. red wine
- 1 tsp. each oregano leaves and basil
- 1/2 tsp. salt
Sour Cream Mashed Potatoes

Peel and quarter or half (if small) all potatoes and cook until soft in salted water
- 1 sm. bag potatoes
- 1 med. container sour cream
- 3 Tbsp. butter or margarine
- 3-4 Tbsp. dried chives
- Salt and pepper to taste
Date Cake

Mix dates with boiling water and cool to lukewarm
- 1 c. chopped dates
- 1 c. boiling water
- 1/2 c. butter
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
- 1 2/3 c. cake flour
- 1/4 tsp. salt
- 1 tsp. baking soda
- 1/2 c. chopped nuts
Halloween Hi-Jinks

Mix together rolled wafers and and chopped nuts
- 6 oz. vanilla wafers
- 1 c. chopped nuts
- 1 c. powdered sugar
- 1/4 lb. butter or margarine
- 3 eggs
- 1 1/2 sq. (1 1/2 oz.) unsweetened chocolate
- 1/2 tsp. vanilla extract
Healthy & Delicious Green Lemonade

Process romaine lettuce, kale, ginger, apples, and lemon through a juicer
- 1 head romaine lettuce
- 4 leaves kale
- 1 (1/2 inch) piece ginger
- 2 apples, quartered
- 1 lemon
Cranberry Salad 1

The preparation of this will require some thought as, once again, Ruth knew what she was doing to begin with
- 1 qt. raw cranberries
- 2 whole oranges
- 1 small can crushed pineapple
- 2 c. sugar
- 3 pkgs. lemon jello
- 2 qts. hot water
Holiday Nut Date Cake

Makes 2 small loaves
- 1 lb. dates
- 1 lb. walnuts, cut in pieces
- 1 lb. Brazil nuts (quite whole)
- 1/3 tsp. salt
- 1 c. sugar
- 4 eggs, separated
- 1 1/2 c. flour
- 2 tsp. baking powder
Kentucky Burgoo

Brown chicken, steak and onion in shortening large skillet
- 1 frying chicken, cut up
- 1 lb. round steak, cut in cubes
- 1/2 c. chopped onion
- 3 Tbsp. shortening
- 1 envelope French's Cillo Mix
- 3/4 tsp. French's garlic salt
- 1 can (1 lb.) tomatoes
- 1/4 c. water
- 1 pkg. (10 oz) frozen mixed vegetables
- 1 package (10 oz) frozen okra (if desired)
