People have had no idea there isn't any meat in this! Can be made ahead and refrigerated

  • 1/3 c. olive or salad oil
  • 1 lrg. onion, chopped
  • 2 cloves garlic, minced
  • 1 med. unpeeled eggplant, diced
  • 1/4 lb. mushrooms, sliced
  • 1 can (about 16 oz.) Italian-style tomatoes
  • 1 can (8 oz.) tomato sauce
  • 1/2 c. dry red wine
  • 1 med. carrot, shredded
  • 1/4 c. parsley, chopped
  • 2 tsp. oregano leaves
  • 1 tsp. each dry basil and salt
  • 1/4 tsp. pepper
  • 16 lasagne noodles
  • 2 c. (1 lb.) ricotta cheese
  • 2 c. (8 oz.) shredded mozzarella cheese
  • 1/1 /2 c. (4 1/2 oz.) grated Parmesan cheese

  • Mustard Sauce:
  • 2 lbs. ground pork
  • 2 lbs. ground ham
  • 1 egg
  • 1 c. bread crumbs
  • 1/2 c. milk
  • 1 med. onion
  • 3 Tbsp. canned tomato soup
  • 1/2 tsp. paprika
  • 1/4 tsp. salt
  • 1/2 c. tomato soup
  • 1/2 c. salad mustard
  • 1/2 c. vinegar
  • 1/2 c. sugar
  • 1/2 c. margarine
  • 2 beaten egg yolks

  • 2 c. bite-size broccoli tops, blanched
  • 2 c. cooked rice

  • 2 eggs
  • 1/2 c. ricotta
  • 1 tsp. Dijon mustard
  • 1/3 c. skim or low-fat milk
  • 2 Tbsp. freshly grated Romano cheese

  • To Increase:
  • 1 bag frozen Green Giant white corn (a must)
  • 1 8-oz. pkg. cream cheese
  • Jalepenos to taste
  • Sliced olives (optional)
  • Chopped nuts (optional)
  • Pimento (optional)
  • 1 bag corn to 1 pkg. cream cheese. Add addional items if desired.
