Great Vegetable Lasagne

People have had no idea there isn't any meat in this! Can be made ahead and refrigerated
- 1/3 c. olive or salad oil
- 1 lrg. onion, chopped
- 2 cloves garlic, minced
- 1 med. unpeeled eggplant, diced
- 1/4 lb. mushrooms, sliced
- 1 can (about 16 oz.) Italian-style tomatoes
- 1 can (8 oz.) tomato sauce
- 1/2 c. dry red wine
- 1 med. carrot, shredded
- 1/4 c. parsley, chopped
- 2 tsp. oregano leaves
- 1 tsp. each dry basil and salt
- 1/4 tsp. pepper
- 16 lasagne noodles
- 2 c. (1 lb.) ricotta cheese
- 2 c. (8 oz.) shredded mozzarella cheese
- 1/1 /2 c. (4 1/2 oz.) grated Parmesan cheese
Ham Loaf "Very Good!"

I CRAVE this stuff often. The sauce is incredible
- Mustard Sauce:
- 2 lbs. ground pork
- 2 lbs. ground ham
- 1 egg
- 1 c. bread crumbs
- 1/2 c. milk
- 1 med. onion
- 3 Tbsp. canned tomato soup
- 1/2 tsp. paprika
- 1/4 tsp. salt
- 1/2 c. tomato soup
- 1/2 c. salad mustard
- 1/2 c. vinegar
- 1/2 c. sugar
- 1/2 c. margarine
- 2 beaten egg yolks
Layered Cheese - Pineapple Salad

Sliced apples may also be used
- 1 pkg. lemon gelatin
- 2 c. boiling water
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1 small can shredded pineapple
- 1 tsp. sugar
- 1 pkg. cream cheese
- 1/2 c. broken nuts
Gold Cake with Yolks

- 1/4 c. shortening
- 1/2 c. sugar
- 3 egg yolks
- 1 c. cake flour
- 1 3/4 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. milk
- 1 tsp. vanilla
Green-Thumb Torte

Blanch greens by putting them in a strainer and pouring boiling water over them for three to five seconds
- 2 tsp. olive oil
- 2 cloves garlic, minced
- 2/3 c. minced onion
- 1/2 c. blanched and minced green kale
- 1/2 c. blanched and minced collards or turnip greens
- 2 c. bite-size broccoli tops, blanched
- 2 c. cooked rice
- 1 med. tomato, chopped
- 1 tsp. basil
- 1/2 tsp. thyme
- 2 eggs
- 1/2 c. ricotta
- 1 tsp. Dijon mustard
- 1/3 c. skim or low-fat milk
- 2 Tbsp. freshly grated Romano cheese
- Paprika
Easy Cheesy Spicy Dip

This is super-easy and really good for a holiday or special occassion dip! Can be served hot or cold
- To Increase:
- 1 bag frozen Green Giant white corn (a must)
- 1 8-oz. pkg. cream cheese
- Jalepenos to taste
- Sliced olives (optional)
- Chopped nuts (optional)
- Pimento (optional)
- 1 bag corn to 1 pkg. cream cheese. Add addional items if desired.
Simple Fudge Squares

- 1 c. flour
- 1 c. sugar
- 2 heaping Tbsp. cocoa
- 1/2 tsp. baking powder
- 2 eggs, unbeaten
- 1/2 tsp. vanilla
- 1/2 c. melted butter
- 1 c. nuts
Chocolate Frosting

- 1 c. powdered sugar
- 1 Tbsp. butter
- 2 sqs. bitter chocolate
- 1/4 c. milk
- 1 egg
- pinch salt
- 1/2 tsp. vanilla

Norv Nero's incredible meal! "There is a 'procedure' to his recipe but once you've done it once, it's not bad
- Cooking Sauce (biggie):
- 1 lb. boneless lean steak (sirloin or flank)
- 2 Tbsp. soy sauce
- 1 tsp. sugar
- 1 tsp. minced fresh ginger
- 1 clove minced garlic
- Mushrooms
- Onions
- Green pepper
- Broccoli and other vegetables of choice cut into bite-sized pieces
- Oil
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 1 tsp. sugar
- 1/2 c. beef broth
- Optional:
- Pea Pods
- Halved cherry tomatoes
- Rice or chinese noodles
