- Russian Dressing:
- 1 cup mayonnaise
- 1/4 cup chili sauce
- 1 tablespoon minced onion
- 1 tablespoon minced dill pickle
- 1 tablespoon minced celery
- 1 tablespoon minced parsley leaves
- 1 tablespoon heavycream
- 1/2 teaspoon drymustard
- 1/2 teaspoon hot pepper sauce
- 1/4 teaspoon worcestershire sauce
- 1/4 teaspoon sugar
- salt
- 2 pounds corned beef, sliced thin
- 12 slices Rye bread
- 12 ounces sauerkraut
- 12 slices Swiss Cheese
- cole slaw, homemade
- Softened butter
Firehouse Shrimp Creole

Shrimp Creole as prepared by my husband who is a firefighter
- Equal amounts (2 cups each)
- celery
- green peppers
- Spanish onions
- 4 cloves chopped garlic
- Olive Oil
- 2-28 oz. cans crushed tomatoes
- Red pepper flakes
- 1 cup white wine(Pinot Grigio)
- 3 Bay Leaves
- Salt
- Pepper
- Cayenne Pepper to taste
- Worcestershire sauce, few dashes
- Parsley to cover top
- Dash or 2 Old Bay Seasoning
- Frozen uncooked shrimp, 31 to 40 count
- size, peeled and deveined, about 2
- pounds
- Cooked ange hair pasta or rice
- Grated locatelli cheese
Vegetable Soup

- 2 tablespoons butter or olive oil
- 1/2 cup diced carrots
- 1 cup diced onions
- 1 cup diced celery
- 4 cups hot chicken stock
- 2 cans stewed tomatoes, chopped and
- drained
- 1 cup diced, peeled potatoes
- 1 cup diced, peeled turnips(optional)
- 2 tablespoons chopped parsley
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped spinach or cabbage

- Table Salt
- 1 pound elbow macaroni
- 2 red bell peppers, seeded and chopped
- 2 ribs celery, chopped
- 4 scallions, sliced thin
- 2 tablespoons cider vinegar
- 1 teaspoon hot sauce
- 1 teaspoon chili powder
- 1/8 teaspoon garlic powder
- Pinch cayenne pepper
- 1 cup mayonnaise
- 1/2 cup barbecue sauce
- Ground black pepper
Grilled Lemon Chicken

Delicious, moist, oh so flavorful marinated grilled lemon chicken recipe
- Juice of 1 lemon
- 1 tablespoonn white vinegar
- 2 tablespoon chopped fresh dill
- 2 tablespoons chopped fresh basil
- 1 tablespoon honey
- 1 tablespoon dijon mustard
- 1 teaspoon salt
- black pepper to taste
- 1/4 cup olive oil
- 2 1/2 pounds boneless skinless
- chicken breasts, pounded slightly
- 1 lemon, thinly sliced
- 1/3 cup Sliced black olives or
- Kalamata
- ** I also make another batch of dressing , halved.. my adaptation to the recipe.
Firehouse Chili

Our favorite chili recipe
- 3 1/2 to 4 pounds 85% ground beef
- 2 cans red kidney beans, drained
- 3 green peppers, chopped
- 2 red peppers, chopped
- 2 large onions, chopped
- 5 garlic cloves, minced
- Salt, to taste
- Freshly ground black pepper
- 3 tablespoons cumin, or to taste
- 1 teaspoon cayenne, or to taste
- 4 tablespoons chili powder, or to taste
- 1 heaping tablespoon paprika, or to taste
- 3 (28-ounce) cans crushed tomatoes
- Up the spices appropriately as per your families heat tolerance. These are the amounts we use for our family so the kids can enjoy it.
Peanut Butter Pie

- Crust:
- 1 1/4 cups chocolate cookie crumbs
- 1/4 cup sugar
- 1/4 cup butter, melted
- Filling:
- 1 8oz cream cheese softened
- 1 cup creamy peanut butter
- 1 cup sugar
- 1 tablespoon butter, softened
- 1 teaspoon vanilla
- 1 cup heavy cream, whipped
- Grated chocolate or chocolate cookie crumbs for garnish, optional

- 1/4 cup brown sugar
- 2 teaspoons cinnamon
- 1 teaspoon nutmeg
- Biscuit Dough
- 2 1/2 cups unbleached white flour
- 2 tablespoons brown sugar, packed
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/2 cups plus 1 tablespoon heavy cream
- Icing
- 6 tablespoons confectioners’ sugar
- 4 to 6 teaspoons milk or heavy cream
Cannoli Cake

- 3/4 cup sugar
- 3 tablespoons cornstarch
- 3/4 cup whole milk
- 1 (15 ounce) container ricotta cheese
- 1 tablespoon grated orange zest
- 1 tablespoon sweet marsala wine (optional)
- 1 1/2 teaspoons vanilla extract
- 1/2 cup miniature semisweet chocolate chips

- 8 tablespoons butter, melted
- 3 large eggs
- 2 teaspoons vanilla extract

- 3 3/4 cups confectioners' sugar
- 3-4 tablespoons milk
