Ingredients

  • 2

    tablespoons butter or olive oil

  • 1/2

    cup diced carrots

  • 1

    cup diced onions

  • 1

    cup diced celery

  • 4

    cups hot chicken stock

  • 2

    cans stewed tomatoes, chopped and

  • drained

  • 1

    cup diced, peeled potatoes

  • 1

    cup diced, peeled turnips(optional)

  • 2

    tablespoons chopped parsley

  • 1

    teaspoon salt

  • 1/4

    teaspoon black pepper

  • 1

    cup chopped spinach or cabbage

Directions

Heat butter in a large saucepan. Add onion, calery, carrots and cook on medium heat until slightly softened. Then add your broth, tomatoes, potatoes, parsley, salt and peper. Cover and cook for 35 minutes. Then add your cup of spinach or cabbage. Cook about 5minutes more. Add parsley, salt, and pepper to taste if you wish.
