Squash Pudding Pie

1) Preheat oven to 350˚ F
- 3 cups baked or simmered winter squash, scooped from the skin and mashed: butternut, buttercup, sweet dumpling, delicata, kabocha, sweet mama or Hokkaido
- 3/4 cup blended, (full fat, not lite) unsweetened, coconut milk
- 1/4 cup honey; additional 1 or 2 tablespoons as needed
- 3 whole eggs
- 1 1/2 tablespoons arrowroot powder
- 2 teaspoons pumpkin pie spice
- 1 1/2 teaspoons pure vanilla extract/flavoring or maple extract/flavoring
- 1/4 teaspoon finely ground, unrefined sea salt
- 1/4 to 1/2 teaspoon pure stevia extract powder or 1/2 to 1 teaspoon clear stevia extract liquid (start with less; add more only if needed)
- Whipped Cream, optional
Beef Stroganoff (PC-BW)

1) Heat butter and oil on high heat until melted and sizzling
- 2 tablespoons butter
- 1 tablespoon oil
- 1 1/2 lbs sirloin steak, cubed
- 1 yellow onion, finely diced
- 8 oz. button mushrooms, sliced
- 1/2 cup beef stock or broth
- 1 tablespoon lemon juice
- 4 garlic cloves, minced
- 1/8 teaspoon allspice
- 1/8 teaspoon pepper
- 8 oz. sour cream
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt
Smothered Pork Chops with Apple Cider (ATK)

1) Heat oil in a 12" skillet over medium-high heat until just smoking
- 4 boneless pork loin chops, 1 in thick
- 1 tbs oil
- 2 slices bacon, minced
- 1 onion, halved and sliced thin
- 2 tsp sugar
- 2 bay leaves
- 1 sprig fresh thyme
- 1 1/2 cups apple cider
- 2 tbs water
- 2 tsp cornstarch
- 2 tsp Dijon mustard
- 2 tsp cider vinegar
- salt and pepper
Pork Loin Roast (PC-BW)

1) Heat oil on high heat until sizzling
- 1 tablespoon oil
- 1 (2-3 1/2 lb) pork loin roast
- 1 cup chicken stock or broth
- 1 tablespoon minced garlic
- 2 teaspoons lemon zest
- 1 1/2 cups frozen cherries
- 1/2 cup water
- 1/4 cup Dijon mustard
- 2 tablespoons light brown sugar
- 2 teaspoons corn starch, mixed into 1 tablespoon water
- 1 tablespoon butter
- Salt & pepper
Babka - Ukrainian Style (AR)

Ideally, this bread should be about 3 3/4" - 4 1/4" high in the very center of the loaf
- 1 cup golden raisins
- 2 teaspoons rum
- 1 cup skim, 1%, or 2% milk (between 65 °F and 75 °F)
- 2 tablespoons unsalted butter, melted and cooled to between 65 °F and 75 °F
- 3 large eggs (room temperature)
- 3 cups Bread Flour Mix "A"
- 1/3 cup granulated sugar
- 2 1/4 teaspoons xantham gum
- 3/4 teaspoon salt
- 1 packet (1/4 oz.) active dry yeast granules (not quick-rise)

- 2 teaspoons oil
- 1 small onion, minced
- 2 tablespoons chili powder
- 3 medium garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 1 pound 90% lean ground beef
- 1/2 cup canned tomato sauce
- 1/2 cup low-sodium chicken broth
- 2 teaspoons cider vinegar
- 1 teaspoon brown sugar
- 8 taco shells
- Salt
- Ground black pepper

- 2/3 cup (109 g) Brown Rice Flour Mix
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon xantham gum
- 2 oz. unsweetened chocolate
- 4 oz. semisweet chocolate
- 1/2 cup unsalted butter
- 1 1/4 cups granulated sugar
- 2 teaspoons pure vanilla extract

- 1/4 cup chopped, toasted walnuts (optional)
