Cinnamon Cream Cheese Frosting

1) Mix cream cheese and butter well
- 8 ounces cream cheese, room temperature
- 1/4 cup unsalted butter, room temperature
- 1 teaspoon vanilla extract or vanilla bean paste
- 1 1/2 teaspoons cinnamon (add more to taste)
- 2-3 cups powdered sugar (add more or less to make it a stiffness that you like)
Italian Seasoning

This replaces the store bought spices, which can be expensive, and tastes so much better
- 3 tablespoons dried basil
- 3 tablespoons dried oregano
- 3 tablespoons dried parsley
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
Baking Chocolate (Unsweetened)

- 1 tablespoon butter
Scallops Veracruzano (PC-BW)

1) Heat oil on high heat until sizzling
- 1 tablespoon olive oil
- 1 red onion, thinly sliced
- 1 jalapeno pepper, seeded and chopped
- 2 tomatoes, diced
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh oregano
- 1/2 cup roughly chopped green olives
- 1/3 cup chicken stock or broth
- 1 1/2 lbs. sea scallops, rinsed
- Juice of 1/2 lime
- 1/8 teaspoon red pepper
- Salt and pepper
Pumpkin Pie (JS)

1) Preheat oven to 450. 2) In a large bowl, whisk the eggs until foamy
- 1 Pie Crust
- 2 extra-large eggs, room temperature
- 1/2 (105 g) cup packed dark brown sugar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 teaspoon salt
- 1 1/2 cups (360 ml) evaporated milk
- 15 oz. (430 g) canned pumpkin puree OR 1 3/4 cups (420 ml) sweet potato puree
- 2 tablespoons unsalted butter, melted
- Unsweetened whipped cream (optional)
Old Bay Seasoning

Great Seasoning with sea food
- 1 tbsp celery seed
- 1 tbsp whole black peppercorn
- 6 bay leaves
- 1/2 tsp whole cardamom pod
- 1/2 tsp mustard seeds
- 4 whole cloves
- 1 tsp sweet Hungarian paprika
- 1/4 tsp mace
Irish Soda Yeast Sandwich Bread (AR)

Ideally, this bread should be about 4" high in the very center of the loaf
- 1 cup plus 3 tablespoons fresh buttermilk (between 65 °F and 75 °F) OR 1 cup plus 3 tablespoons water (between 65 °F and 75 °F) and 5 tablespoons buttermilk powder
- 1/4 cup oil (between 65 °F and 75 °F)
- 2 large eggs (room temperature)
- 3 cups Bread Flour Mix "A"
- 3 tablespoons sugar
- 2 1/4 teaspoons xantham gum
- 3/4 teaspoon salt
- 1 packet (1/4 oz.) active dry yeast granules (not quick-rise)
Banana Cream Pie (AR)

1) Cut 2 bananas into 1/4" thick slices and mix into cooled vanilla cream pie filling
- 2 large bananas, very ripe
- 1 Traditional pie crust or tart shell crust recipe
- 1 Vanilla cream pie filling recipe
- 3/4 cup heavy cream
- 2 tablespoons confectioners' sugar
- 1 1/2 teaspoons vanilla extract
Italian Artisan Bread with Raisins & Fennel (AR)

Ideally, this bread should be about 3 1/2" - 3 3/4" high in the very center of the loaf
- 1 1/2 cups water (between 65 °F and 75 °F)
- 2 tablespoon olive oil (between 65 °F and 75 °F)
- 3 cups Bread Flour Mix "A"
- 3 tablespoons sugar
- 2 teaspoons xantham gum
- 1 teaspoon salt
- 1 packet (1/4 oz.) active dry yeast granules (not quick-rise)
- 1 cup golden raisins
- 2-3 teaspoons fennel seeds
- 1-2 tablespoons yellow cornmeal
Focaccia (AR)

1) Spray an 8" or 9" round cake pan with baking spray and lightly dust with rice flour or sprinkle with cornmeal
- 1 1/2 cups bread flour mix
- 1 teaspoon xanthan gum
- 1/2 teaspoon salt
- 1 tablespoon granulated sugar
- 1/4 oz. (7 g) dry quick-rise yeast granules
- 1 teaspoon olive oil
- 3/4 cup plus 1 tablespoon water, heated to 110°F
- Olive oil
- Fresh rosemary
- Sea salt
